1 (14 ounce) can refried beans
1 cup sour cream
1 cup salsa, drained slightly

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a large deep-dish pie pan with cooking spray.
  • Heat a large skillet over medium-high heat. Break ground beef into small pieces and add to hot skillet; cook and stir until the beef is crumbly and no longer pink, 7 to 10 minutes. Drain and discard any excess grease. Season drained beef with taco seasoning.

1/2 lb lean ground beef
1 deep dish pie shell
3 tablespoons taco seasoning (homemade, or I use Penzeys)
1 (15 ounce) can refried beans
1 (8 ounce) jar salsa (your favorite)
8 ounces shredded cheese (Cheddar, Mexican blend, whatever)
2 cups crushed tortilla chips (approx.; flavor doesn't matter)
lettuce (optional)
diced tomato (optional)
sliced black olives (optional)
sour cream (optional)
sliced jalapeno (optional)

Steps:

  • Bake the pie crust according to package directions.
  • Preheat oven to 350.
  • Brown ground beef and drain.
  • Add taco seasoning, following package directions.
  • Mix the beans and the salsa in a bowl.
  • Spread the bean mixture in the bottom of the baked pie crust.
  • Add half the ground beef.
  • Top with half the tortilla chips.

  • Heat oven to 400°F. Spray 9-inch pie plate with cooking spray.
  • In 12-inch nonstick skillet, cook beef, bell pepper and onion over medium-high heat 8 to 10 minutes or until beef is browned and vegetables are softened; drain. Wipe out skillet. Steps:

  • Preheat oven to 350°F.
  • Brown ground beef with onions, garlic, cumin, salt and pepper.
  • You can also add a ccan of Rotel or diced tomatoes with the meat for more color and flavor, but it is delicious with or without them.
  • While meat is cooking, lightly spray 9x13 baking pan with non-stick spray.
  • Crush plenty of corn chips and thoroughly cover the bottom of dish.
  • Mix together the corn and your choice of 2 cans of the beans, drained (except the Ranch Style Texas beans if you use those) in a medium mixing bowl.

  • Layer the meat evenly over the beans.
  • Add the cheese evenly on top of the meat.

I've been making this for my family for over 25 years, it came from the LLLI cookbook, Whole Foods for the Whole family. The original recipe calls for beans, I have never used them as I can't stand them, so I have included them as optional. This is a very kid friendly recipe, and easier for them to eat then hard shell tacos. It is NOT very spicy, if you like it spicy add more hot sauce, some green chilies, more cumin, etc. Pepper jack on top would also spice it up some more. The crust is very different, more bread or biscuit - like not at all like a regular pie crust. When you spoon it in the pan is will seem all gooey and you'll wonder how it works.

¼ cup blue cheese salad dressing
