1 can (4 ounces) chopped green chiles
1/2 medium onion, cut into wedges
1/2 medium sweet red pepper, chopped
4 garlic cloves, halved
1 can (15 ounces) black beans, rinsed and drained
1 large egg
1 tablespoon chili powder
3/4 teaspoon ground cumin
3/4 cup dry whole wheat bread crumbs
4 whole wheat hamburger buns, split
4 tablespoons reduced-fat sour cream
4 tablespoons salsa

Steps:

  • Preheat oven to 375°. Place chiles, onion, pepper and garlic in a food processor; pulse until finely chopped. Drain and set aside. In a large bowl, mash beans. Add the onion mixture, egg, chili powder, cumin and bread crumbs; mix well., Shape into 4 patties; transfer to a 15x10x1-in. baking pan coated with cooking spray. Refrigerate for 30 minutes. Bake until heated through, 8-10 minutes on each side. Serve on buns with sour cream and salsa.

1 carrot, sliced
1 (15 ounce) can kidney beans
½ cup chopped green bell pepper
½ cup chopped onion
2 cups salsa
1 cup dried bread crumbs
½ cup whole wheat flour
½ teaspoon ground black pepper
salt to taste
1 pinch chili powder

Steps:

  • Place carrot into a bowl, and fill with about 1/4 inch of water. Cover with plastic wrap, and cook in the microwave for 2 minutes, or until soft. Drain.
  • Mash beans and steamed carrot in a large bowl. Mix in green pepper, onion, salsa, bread crumbs, and whole wheat flour. Season with salt, black pepper, and chili powder. Add flour to create a firmer mixture, or more salsa if the mixture is too stiff. Form mixture into 8 patties, and place on a greased baking sheet.
  • Heat a large skillet over medium-high heat, and coat with cooking spray. Fry the patties for about 8 minutes on each side, or until browned and firm.

I am trying to push full forced with my diet to finally reach my 100lbs lost target. So, I am collecting every low fat recipe that looks good to me and this is the latest one. I found it in the April 2009 of BBC good food magazine. The recipe says that the uncooked burgers can be frozen so they would be good to make ahead and have when I need something quick but also healthy.

2 (14 ounce) cans kidney beans, rinsed and draimed
4 ounces breadcrumbs
2 teaspoons mild chili powder
1 bunch fresh cilantro, stalks and leaves chopped
1 egg
7 ounces salsa
1/4 pint low-fat plain yogurt
1/2 lime, juice of
6 whole grain buns

Steps:

  • Heat grill/broiler to high.
  • Tip the beans into a large bowl, then roughly crush with a potato masher.
  • Add the breadcumbs, chili powder, cilantro stalks and half of the leaves, egg and 2 tablespoons salsa.
  • Season to taste and then mix together well with a fork.
  • Divide the mixture into 6, then wet your hands and shape into burgers. If you are freezing them this is the time where the burgers can be frozen.
  • Place on a non-stick baking tray, then grill for 4 to 5 minutes on each side until crisp. If cooking from frozen, bake for 20 to 30 minutes in a 400 degree oven.
  • While the burgers are cooking, mix the remaining cilantro leaves with the yogurt, lime juice and a good grind of black pepper.
  • Split the buns in half and spread the bases with some of the yogurt.
  • Top with any lettuce, onion, etc that you might like and then put a burger on top.
  • Put another dollop of lime yogurt and some salsa on top of burger and put the other half of the bun on top.
  • Serve.

Tips:

  • Use a food processor to quickly and easily chop the vegetables and beans.
  • If you don't have a food processor, you can grate the vegetables and beans by hand.
  • Be sure to drain and rinse the black beans before using them.
  • If you like your burgers spicy, add a diced jalapeño pepper to the mixture.
  • Top your burgers with your favorite toppings, such as salsa, guacamole, sour cream, or cheese.
