MEXICAN CHICKEN AND BLACK BEAN SALAD
I call this diet haters' diet food because simple substitutions mean you won't feel deprived. You shouldn't miss the tortilla chips because you have delicious black beans instead, and you still get the yummy spicy Mexican flavor and cheese. While not necessarily authentic, this salad is easy to make! If you have time, it's is also wonderful topped with onions and maybe fresh jalapenos.

BLACK BEAN AND CORN SALAD - SPICY MEXICAN SALAD/SIDE DISH
A spicy, crisp, fresh vegetable salad. This salad should be made several hours before it is served....to marinate the vegetables and blend the flavors. I personally don't cook the corn I cut from the cobb, just a personal preference. If corn isn't in season a good quality frozen corn is a perfect substitution - I don't even defrost it! The produce you use should be top quality for a superior result.

MEXICAN BEAN SALAD
This is the perfect salad to take to a family reunion or potluck. It's colorful, keeps well and is full of flavor without being too spicy or vinegary. I think the Sun Vista brand of beans has the best flavor for this recipe. Passive cooking time is chill time.

Steps:
- Cut the ends off the green beans and slice into pieces about an inch long. Fill a medium sized pot halfway with salted water. Bring to a boil and add the green beans to the pot and boil for 5 minute, or as long as it takes for the beans to get tender. Green beans can be highly variable in how long it takes to cook them to tenderness. More mature beans can take longer - up to 20 minutes.
- Drain the green beans and put in the bowl with the pinto and black beans. Drizzle the olive oil over everything and toss to combine. Mix in the green onions, jalapeno, garlic and Cotija cheese.
- In a separate bowl, mix the lime juice and sugar until the sugar dissolves - then add it to the salad. Coat the beans well and let marinate for at least 1 hour, preferably several hours. Right before you serve, toss in the cilantro. Add more salt to taste if needed.

Steps:
- 1. Cut the ends off of the green beans and slice into pieces about an inch or so long. Fill a medium-sized pot halfway with salted water. Bring to a boil and add the green beans to the pot and boil for 5 minutes, or as long as it takes for the beans to get tender (or tender-crisp if you prefer). Green beans can be highly variable in how long it takes to cook them to tenderness. More mature beans can take up to 20 minutes.
- 2. Drain the green beans and rinse with cold water to stop the cooking process. Drain well. Place them in the bowl with the pinto and black beans. Drizzle the olive oil over everything and toss to combine. Mix in the green onions, jalapeno, garlic and cheese.
- 3. In a separate bowl, mix the lime juice and sugar until the sugar dissolves. Add the mixture to the salad. Coat the beans well and let marinate for at least 1 hour, preferably several hours. Just before serving, toss in the cilantro and adjust seasonings.
MEXICAN TURKEY AND BEAN SALAD
Steps:
- 1) Combine salsa and vinegar in a small jar; cover tightly, and shake vigorously. Set aside. 2) Coat a medium skillet with cooking spray; place over medium heat heat until hot. Add turkey and next 3 ingredients; cook until turkey is browned, stirring until it crumbles. Drain, if necessary. 3) Combine turkey mixture, kidney beans, and next 3 ingredients in a large bowl; toss lightly. Add 1/3 cup salsa mixture, and toss. 4) Place lettuce and endive in a large bowl; spoon turkey mixture over lettuce mixture. Top with green beans, and drizzle with remaining salsa mixture.
Tips:
- Choose the right beans: For the best flavor and texture, use dry beans that have been soaked and cooked. Canned beans can also be used, but they may be softer and less flavorful.
- Use fresh vegetables: Fresh vegetables will give your salad the best flavor and texture. If you can't find fresh vegetables, frozen vegetables can also be used.
- Don't overcook the beans: Overcooked beans will be mushy and bland. Cook the beans according to the package directions, or until they are tender but still hold their shape.
- Add some spice: Mexican bean salad is traditionally served with a spicy dressing. You can use a store-bought dressing, or make your own by combining olive oil, lime juice, cilantro, and chili powder.
- Let the salad chill: Mexican bean salad is best served chilled. This allows the flavors to meld and develop.
Conclusion:
Mexican bean salad is a delicious and healthy dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its bold flavors and refreshing texture, Mexican bean salad is sure to be a hit with your family and friends.
