Tips:

  • To achieve a crispy coating: Pat the chicken wings dry before coating them in flour and spices. This will help the coating adhere better and result in a crispier texture.
  • Make sure your oil is hot enough before frying the chicken wings. The ideal temperature is between 350°F and 375°F. If the oil is not hot enough, the chicken wings will absorb too much oil and become greasy.
  • Don't overcrowd the pan when frying the chicken wings. This will cause the temperature of the oil to drop and the chicken wings will not cook evenly.
  • Fry the chicken wings in batches and drain them on paper towels to remove excess oil.
  • For the Buffalo sauce, you can adjust the amount of cayenne pepper to your desired level of spiciness.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5 minutes.
  • For the salsa sauce, you can use your favorite store-bought salsa or make your own using fresh ingredients.
  • Serve the Mexican Buffalo wings with your favorite dipping sauces, such as ranch dressing, blue cheese dressing, or guacamole.
