1/2 pound lean ground turkey
1 cup finely chopped onions
1 cup finely chopped zucchini
1 envelope (1 1/4 ounces) low-sodium taco seasoning
2/3 cup frozen corn kernels
1 cup canned black beans, rinsed and drained
2 cups jarred salsa
8 (6-inch) corn tortillas
1 1/2 cups shredded reduced-fat Mexican cheese blend
1/4 cup sliced scallions (white and light green parts only)
1/2 cup fat-free sour cream (or use low-fat; optional), for serving

Steps:

  • 1. Preheat the oven to 350°F. Spray a 9 by 13-inch baking dish with cooking spray.
  • 2. In a large skillet, heat the oil over medium-high heat. Add the turkey and cook until browned, 5 to 7 minutes. Stir in the onions and zucchini and cook until tender, about 5 minutes. Stir in the taco seasoning, 2/3 cup water, and the corn. Simmer until thickened, about 2 minutes, then stir in the black beans.
  • 3. Spread 1/2 cup of the salsa in the bottom of the baking dish. Lay 4 tortillas over the salsa, and spoon half of the meat mixture on top. Cover with 3/4 cup of the salsa and 1 cup of the shredded cheese. Top with 4 more tortillas and the remaining 3/4 cup salsa. Scatter the remaining 1/2 cup shredded cheese over the top.
  • 4. Bake the casserole until the cheese is melted and bubbling, about 25 minutes. Slice and serve, topped with scallions and sour cream.

1 cup warm water
¾ cup instant dry milk
3 (6 inch) corn tortillas, cut into bite-size pieces

1 (10 ounce) can diced tomatoes and green chiles (such as RO*TEL®), drained
1 cup frozen whole kernel corn

Steps:

I think there are supposed to be 6 servings in this dish but because everyone has seconds it serves 5 with no leftovers. For more servings increase to 1 1/2 lb beef and increase corn bread to 2 boxes and cheese accordingly. Bake in 9x9 or larger casserole dish.

Creamy chicken dish that you can spice up to suit your taste. Basically, it's slow cooker chicken with cream cheese & any other ingredients you like. This recipe is our favorite combination and has a mexican flair. Plus, using the crock pot makes this dish simple & fills the whole house with a nice aroma. We like it best served over cooked egg noodles or rice. I gave this recipe to my cousin & she serves it by adding spoonfuls of it to pre-made taco shells. (Note: sometimes instead of onion & red bell pepper I just add 1-1 1/2 cups of frozen bell pepper/onion from the bag in the freezer secion)

1 (15 1/2 ounce) can black beans, drained
1 cup frozen corn

1 (8 ounce) package cream cheese

  • Add all ingredients to crock pot EXCEPT cream cheese & yes, you can add the chicken breasts frozen.
  • Cook on high for 4-6 hours or low for 8 hours.
  • Add the package of cream cheese (whole) to top of cooking chicken mixture for last 30 minute of cooking.
  • Serve over cooked rice or egg noodles with a dollup of sour cream & sprinkles of shredded cheddar if desired.

MEXICAN FIESTA DIP MIX (IN A JAR)

Another great mix that makes life easier (see also "my" Hot Mexican Rub recipe #132796). I included this as part of a gift basket for my friend and of course I had to try it before giving it away. Too bad I din't read the whole recipe before making it. When not only the mix but also the dip was finished, I realised it should go in the fridge for two hours or so. I couldn't wait that long and ate it immediately. Loved it and prepared a second batch. This time I had some leftovers and I put it in the fridge. The next day it tasted even better! Yes, chilling does improve the dip! As I wanted to prepare the dip just for myself, I mixed 2 tablespoons sour cream with 2 tabelspoons low fat mayonnaise and 2 teaspoons Mexican Fiesta Dip Mix. I am considering to prepare the next batch without the dry herbs but add fresh herbs to the mix when preparing the dip. I love fresh herbs and I grow so many on my balcony. When typing this recipe I realised that I forgot to add the salt into my mix. I didn't even miss it! That's why I wrote optional next to the salt. Serve this dip with tortilla chips or fresh vegetables.

One 28 1/2-ounce can whole peeled tomatoes (about 8 tomatoes), drained and crushed

4 cups homemade or low-sodium canned chicken stock, skimmed of fat
1/2 ripe avocado, pitted, cut into 1/4-inch-thick slices

Steps:

  • Preheat oven to 375 degrees. Place tomatillos on a small rimmed baking sheet. Roast in oven, turning once midway through, until they are softened and slightly charred, about 25 minutes. Remove from oven, and let cool slightly. Transfer to the bowl of a food processor; add cilantro, 1 garlic clove, and lime juice. Process until smooth and combined; set aside.

1 1/2 lbs ground beef
1 package taco seasoning mix
1 package medium flour tortilla
1 (16 ounce) can refried beans
taco sauce
1 (4 ounce) can peeled and chopped green chilies
2 cups shredded taco cheese (colby and monterey jack)
2 cups crushed tortilla chips
2 medium tomatoes, chopped

Steps:

  • saute onion in a small amount of oil until tender.
  • Add beef and brown, stirring.
  • Drain grease from meat and add taco seasoning packet along with 1/3 cup of water.
  • simmer, stirring occasionally.
  • Meanwhile, place 3 flour tortillas on bottom of a 9 inch pie pan, spreading tortillas out to cover the entire bottom of the pan.
  • Spread 1/2 of the refried beans over the tortillas.
  • Add 1/2 of the green chilies.
  • Cover with half of the meat mixtureand 1 cup of the cheese.
  • Repeat the layers and top with cruched tortilla chips.
  • Bake at 350 degrees for 30 minutes.

Number Of Ingredients 15

◾1 Pound Ground Beef or Turkey
◾1 Small Onion, Diced
◾1 Red Pepper, diced
◾3 Jalapenos, diced (with or without seeds)
◾1 (16 oz.) Package Frozen Corn
◾1 (10 oz.) Can Campbells Fiesta Nacho Cheese Soup
◾1 Cup Sour Cream
◾2 & 1/2 Cups Mexican Cheese Blend, shredded (if you can't find it you can use Cheddar)
◾3 Cups Cooked White Rice
◾1 (2.25 oz.) Can Sliced Black Olives
◾1 & 1/4 Cups Sliced Grape Tomatoes or Cherry Tomatoes
◾5 Tablespoons Fresh Cilantro, chopped
◾1 Package Taco Seasoning Mix
◾3/4 Cup Water
◾1 Tablespoon Canola Oil

Steps:

  • 1. Preheat oven to 375 degrees. 2. In a large sauté pan, add the Red Pepper, Jalapeno Pepper, Onion and the oil. Sauté just until the veggies are tender, then transfer them to a large bowl. 3. Now add the Ground Beef or Turkey to the sauté pan and brown the meat. Drain then add the Taco Mix and the Water and heat until thickened. Remove the pan from the heat and cool slightly. 4. In a small bowl combine the Sour Cream and the Fiesta Nacho Cheese Soup, set aside. 5. Add the Corn and the Rice to the bowl with the Peppers and Onion. 6. Now stir the Soup mixture in with the Corn and Rice mixture. Add 1 Tablespoon of the Chopped Cilantro into the mixture as well. 7. Spray a 9 x 13 baking dish with nonstick cooking spray. Transfer the Rice and Corn mixture into the bottom of the pan and spread into an even layer. 8. Next spread the Ground Beef or Ground Turkey mixture evenly over the first layer. 9. Cover the baking dish with foil and pop it into the preheated oven and bake for 30-40 minutes. All ovens cook differently so check at 20 minutes. You want the Casserole to be heated through and slightly bubbly. 10. When the Casserole is done remove it from the oven, remove the foil and evenly spread the Cheese on top of the Casserole. 11. Bake an additional 10-15 minutes or until the Cheese is melted. 12. Remove the Casserole from the Oven and sprinkle the Cilantro, Black Olives and Tomatoes on top. 13. Wait 5-8 minutes before serving. If you cut into the Casserole right away, it can fall apart, just like lasagna! ~ Serve this Casserole with a side of Sour Cream.

I made this to go with my vegetarian chili tonight and really enjoyed it! This cornbread has a soft, almost custard like texture. Yum! Adapted from The Everyday Fiesta Cookbook.

1 tablespoon light olive oil (or vegetable oil)
1 1/2 cups yellow cornmeal
1/4 cup all purpose flour
1 teaspoon baking powder
1 teaspoon sugar
1 teaspoon salt
1/4 cup creamed corn
2 large eggs, lightly beaten
1 (4 ounce) can chopped green chilies, drained
2 cups buttermilk
2 tablespoons melted butter (or margarine or vegetable oil)

Steps:

  • Preheat oven to 350*F.
  • Heat the oil in a 9-10 inch cast iron skillet or baking pan in oven.
  • In a large bowl, sift cornmeal, flour, baking powder, sugar and salt. Add remaining ingredients to the bowl; stir mixture together.
  • Remove the hot pan from the oven; pour in batter.
  • Bake 25 minutes or until the cornbread is golden brown and the edges begin to pull away from the sides of the pan.
  • Cool 5 minutes before cutting.
  • Enjoy!

Found this recipe in Quick Cooking magazine. It gives the ravioli a different flair. And it is quick and easy to prepare. Change the cheese or type of ravioli for a different taste.

1 (25 ounce) package frozen beef ravioli (approx 6C cooked ravioli or 50-55 ravioli)
1 (10 ounce) can enchilada sauce
1 (8 ounce) jar salsa
8 ounces shredded monterey jack cheese
1 (2 1/4 ounce) can sliced olives, drained (optional)

Steps:

  • Cook ravioli per package instructions.
  • In large skillet, combine enchilada sauce and salsa.
  • Stir and cook until heated through.
  • Drain ravioli and add to enchilada sauce/salsa mixture.
  • Stir to coat.
  • Top with cheese and olives.
  • Cover and cook for 3-4 minutes over low heat until cheese is melted.

1 (10 7/8 ounce) can large refrigerated buttermilk biscuits
1 (16 ounce) jar chunky salsa
2 cups shredded monterey jack cheese
1 small green bell pepper, chopped
1/2 cup sliced green onion
1 (2 1/4 ounce) can sliced ripe olives, drained

Steps:

  • Separate biscuits; cut each biscuit into 8 pieces.
  • Add the biscuit pieces and salsa to a bowl, toss gently to combine.
  • Spoon mixture into a greased 13x9 inch baking dish.
  • Top with cheese and sprinkle remaining ingredients evenly over the top.
