Time 40m

Number Of Ingredients 10

2 tbsp olive oil
1 onion , finely chopped
2 peppers (choose your favourite colours), finely chopped
4 garlic cloves , very finely chopped or crushed
1 tsp cumin seeds or ½ tsp ground cumin
1 tbsp tomato purée
small pinch of sweet smoked paprika
250g basmati rice
450ml hot vegetable stock (make sure it's vegan-friendly)
finely chopped coriander and sliced spring onions, to serve

Steps:

  • Heat the oil in a large saucepan with a lid, then add the onion, pepper, garlic and cumin and sizzle gently for 8-10 mins until the vegetables are soft and golden. Stir in the tomato purée and smoked paprika and cook for 1 min, then stir in the rice.

Tips:

  • Use high-quality ingredients: The better the ingredients, the better the risotto will be. Use Arborio rice, a short-grain rice that is specifically designed for risotto.
  • Toast the rice: Toasting the rice before cooking it helps to release its starch and give the risotto a creamy texture.
  • Use a good broth: The broth is the foundation of the risotto, so use a flavorful broth that you enjoy. You can use chicken broth, vegetable broth, or even seafood broth.
  • Add the liquid gradually: Don't add all of the broth at once. Add it in small increments, stirring constantly, until the rice is cooked through.
  • Stir constantly: Stirring the risotto constantly helps to prevent the rice from sticking together and burning.
  • Season to taste: Season the risotto with salt, pepper, and other herbs and spices to taste.
  • Let the risotto rest before serving: Let the risotto rest for a few minutes before serving to allow the flavors to meld together.

Conclusion:

Risotto is a delicious and versatile dish that can be made with a variety of ingredients. With a little practice, you can make risotto like a pro. So next time you're looking for a special meal to impress your friends and family, give risotto a try. You won't be disappointed!
