MEYER LEMON YOGURT BUNDT CAKE RECIPE - (4.3/5)

Meyer Lemon Yogurt Bundt Cake Recipe - (4.3/5) image

Provided by Foodiewife

Number Of Ingredients 14

GLAZE:
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon Kosher salt
1 cup plain whole-milk yogurt*
1 1/3 cups sugar, divided
3 extra-large eggs
2 teaspoons lemon zest, grated (2 lemons)
1/2 teaspoon pure vanilla extract
1/2 cup vegetable oil
1/3 cup freshly squeezed lemon juice
1 cup confectioners' sugar
2 tablespoons freshly squeezed lemon juice
I use non-fat Greek yogurt or low-fat yogurt with great results.

Steps:

  • Preheat the oven to 350°F. Grease an 8 1/2 X 4 1/4 X 2 1/2-inch loaf pan ). Line the bottom with parchment paper (Don't skip this). Grease and flour the pan. Or, you can use a bundt cake pan but be sure to flour it well (I use Baker's Joy for perfect results) Sift together the flour, baking powder, and salt into 1 bowl. In another bowl, whisk together the yogurt, 1 cup sugar, the eggs, lemon zest, and vanilla. Slowly whisk the dry ingredients into the wet ingredients. With a rubber spatula, fold the vegetable oil into the batter, making sure it's all incorporated. Pour the batter into the prepared pan and bake for about 50 minutes, or until a cake tester placed in the center of the loaf comes out clean. I always check my cakes 5 minutes before the recommended time, so I don't over bake it. Meanwhile, cook the 1/3 cup lemon juice and remaining ⅓ cup sugar in a small pan until the sugar dissolves and the mixture is clear. Set aside. When the cake is done, allow it to cool in the pan for 10 minutes. Carefully place on a baking rack over a sheet pan. While the cake is still warm, pour the lemon-sugar mixture over the cake and allow it to soak in. Cool. For the glaze, combine the confectioners' sugar and lemon juice and pour over the cake.

DANDY® MEYER LEMON PUDDING CAKE

Dandy® Meyer Lemon Pudding Cake image

Although I have cooked with Meyer lemons, lately they've become my muse-my obsession; and I'm sorry I haven't given Meyer lemons as much attention as they deserve! I was a bit concerned because the recipe didn't indicate to use a bain-marie but the finished product didn't seem to require one. Here's a cake recipe I found recently online that uses this exquisite citrus fruit. Easy! From dudafresh.com. The question remains: Does one eat Meyer lemon pudding cake with a spoon or fork?

Provided by COOKGIRl

Categories     Dessert

Time 55m

Yield 1 cake

Number Of Ingredients 11

3 teaspoons finely grated meyer lemon zest
3 -4 meyer lemons (do not substitute standard lemons)
3/4 cup unbleached cane sugar
1/4 cup unbleached flour
1/4 teaspoon salt
3 large eggs, separated
1 cup whole milk, at room temperature (for best flavor use whole milk or a combination of milk, half and half and or or heavy cream for ext)
4 tablespoons unsalted butter, melted and cooled slightly
real whipped cream
meyer lemon zest
lemon verbena leaves or mint leaf

Steps:

  • Preheat oven to 300 degrees.
  • Butter an 8-inch square baking pan.
  • Finely grate 3 teaspoons zest then squeeze 1/3 cup juice from the lemons; set aside.
  • In a mixing bowl combine the dry ingredients.
  • In another bowl, whisk together the egg yolks, milk, butter, Meyer lemon zest and juice; add this mixture to the dry ingredients and combine.
  • In a separate bowl, beat the egg whites until (soft peaks) form.
  • Start by stirring one third of the egg whites into the batter to lighten, gently fold in the the remaining egg whites. Note: the batter will be thin.
  • Pour the batter into buttered baking pan and bake until golden 35-40 minutes.
  • Serve warm or at room temperature.
  • If desired, garnish the top of each serving with a dollop of real whipped cream and/or a few strands of zest and a whole mint leaf or lemon verbena leaf.
  • Note: The consistency of this dessert is more pudding-like than cake-like. It will firm up slightly once it cools. I discovered it's best to let the cake sit for about 10-15 minutes after removing from the oven. Before serving, take a wet knife and run it around the edges of the pan to gently loosen the cake.

2 large eggs, room temperature
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/3 cup plain greek yogurt or sour cream

Steps:

  • Heat oven to 350 degrees. Butter and flour a light colored metal 9 x 5 inch loaf pan. (Dark pan will over brown cake, glass does not conduct enough heat) In a large bowl use your fingers to combine lemon lemon zest and sugar. Whisk in olive oil until smooth. Whisk in eggs one at a time until well combined. In a second bowl combine flour, baking powder, baking soda, and salt. In a measuring cup or small bowl whisk together 2 tablespoons of lemon juice and yogurt/sour cream. Using a wooden spoon or rubber spatula, add olive oil mixture and yogurt mixture to flour, alternating between them. Stir cake batter until smooth. Pour batter into prepared pan, wrap on counter to smooth out and release any air bubbles. Bake for 45 mins to 1 hour or until cake tester comes out clean. Let cake cool for 10 mins in pan and then turn out on a cooling rack over a sheet pan.

Yield 8-10 servings

Number Of Ingredients 10

8 tbsp. unsalted butter, melted
1/2 cup blanched almond meal/flour
1 1/2 cups all purpose flour
1 tsp. baking powder
3/4 tsp. fine salt
1 1/3 cups sugar
2 eggs
1/2 cup milk, at room temperature
2 tbsp. lemon extract
Zest and juice of 2 Meyer lemons

Steps:

  • Heat oven to 350°. Grease a light colored loaf pan measuring 8 1/2" x 4 1/2" x 2 3/4" with butter and dust it with flour; set aside. Put almond flour in a small bowl and set aside. In a medium bowl, sift together all purpose flour, baking powder, and salt and set aside. Put the melted butter into a large bowl and add 1 cup of the sugar. Mix with an electric mixer on low speed until combined, about 1 minute. Add the eggs, one at a time, beating just long enough to incorporate, about 30 seconds. Add the flour mixture and milk in 3 batches, beginning and ending with the flour. Beat until mixed after each addition, scraping down the sides of the bowl with a rubber spatula, about 3 minutes total. Mix in the lemon extract. With the spatula, fold in the lemon zest and ground almonds. (The mixture will be thin.) Turn batter into prepared pan and bake until a toothpick inserted in the center of the cake comes out clean and dry, about 45-55 minutes. Transfer the pan to a cooling rack. Prepare the glaze: Combine remaining sugar and lemon juice in a small saucepan over medium heat and cook, stirring, until sugar is dissolved, about 2 minutes. (Do not boil.) Brush the glaze over the hot cake. (The excess liquid may pool along the sides of the pan; it will absorb completely as it sits.) Once the cake has absorbed all the liquid, turn it out of the pan and allow it to cool upright on a rack. Once it's cool, wrap the cake with plastic wrap and let stand at room temperature for 24 hours before serving.

Tips:

  • Use fresh Meyer lemons for the best flavor. If you can't find Meyer lemons, you can use regular lemons, but the cake will have a slightly more tart flavor.
  • Zest the lemons before juicing them. This will release the essential oils from the lemon zest and give the cake a more intense lemon flavor.
  • Cream the butter and sugar together until light and fluffy. This will help to incorporate air into the batter and make the cake light and airy.
  • Add the eggs one at a time, beating well after each addition. This will help to prevent the cake from curdling.
  • Fold in the flour and baking powder gently until just combined. Overmixing the batter will make the cake tough.
  • Bake the cake in a preheated oven until a toothpick inserted into the center comes out clean. Do not overbake the cake, or it will become dry.
  • Let the cake cool completely before frosting it. This will help to prevent the frosting from melting.

Conclusion:

Meyer lemon cake is a delicious and refreshing dessert that is perfect for any occasion. It is easy to make and can be customized to your own taste. If you love the flavor of Meyer lemons, then you will definitely enjoy this cake.
