This is one of my husband's favorites, probably because it includes bacon! I often include about 2 tablespoons Jack's Music City White Sauce (a white BBQ sauce) for extra flavor!

2 cups cubed cooked chicken
1 cup diced celery
1 cup shredded sharp Cheddar cheese
½ cup mayonnaise
½ cup toasted slivered almonds
4 slices cooked bacon, crumbled
2 tablespoons fresh lemon juice
1 tablespoon sliced green onion
salt and ground black pepper to taste
⅔ cup crushed potato chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix chicken, celery, Cheddar cheese, mayonnaise, almonds, bacon, lemon juice, green onion, salt, and black pepper together in a 1 1/2-quart baking dish; top with potato chips.

3 boneless chicken breast halves, cooked and cubed
1 cup mayonnaise
1 (10.75 ounce) can condensed cream of mushroom soup
1 (4.5 ounce) can mushrooms, drained
1 (8 ounce) can water chestnuts, drained and chopped
½ cup chopped celery
1 cup crushed butter crackers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small skillet, saute the mushrooms in oil.
  • Mix together the chicken, mayonnaise, soup, sauteed mushrooms, water chestnuts and celery. Place mixture in a 12x7.5 inch casserole dish. Top with the crushed crackers, tossed with melted butter. Bake in the preheated oven for 30 to 45 minutes.

This is an attempt to recreate my favorite restaurant chicken salad. It is not even close- it is better!!

4 boneless skinless chicken breasts
garlic salt
lemon pepper
1/2 cup mayonnaise (or to taste)
1/2 cup plain low-fat yogurt (or to taste)
3 tablespoons tarragon
1/2 cup chopped pecans

Steps:

  • Trim excess fat from chicken.
  • Sprinkle lightly with garlic salt and lemon pepper. Bake in covered dish at 350` for 30-40 minutes, or until juices run clear.
  • Chop chicken breasts into ½-1" cubes.
  • Stir in mayonnaise and yogurt, making sure to coat well. Make sure there is enough mayonnaise and yogurt to coat the chicken well because it soak into the chicken and be dry later.
  • Add remaining ingredients; stir well.
  • Refrigerate for one hour, stir again and serve over romaine lettuce on sourdough toast.
  • Will stay good in refrigerator for up to 3 days.
  • May substitute light or no-fat mayonnaise. May substitute garlic powder and potassium salts such as NuSalt®- a heart healthy alternative.

3 pounds skinless, boneless chicken breast meat - cubed

This is a casserole made with cooked (leftover chicken) and is different from the other hot chicken salad recipes posted. I haven't tried this yet but it is one of Dave's Mom's favorites. 1 cup celery, chopped
1 (10 1/2 ounce) can cream of chicken soup, undiluted

2 tablespoons onions, chopped
1/2 cup corn flake crumbs, to sprinkle on top of casserole
2 tablespoons butter, to dot top of casserole
