I needed a quick way to use up the last fruit in our fruit bowl (apples, apricots, and cherries), and this microwave applesauce recipe was born. The basic recipe has a great bold flavor and is very customizable; add different kinds of fruit or none at all. It also works well doubled. Fast, easy, and delicious way to get your 5-a-day!

Yield 8

Number Of Ingredients 9

4 Gala apples, peeled and cut into 1-inch pieces
1 cup peeled and chopped fresh apricots
½ cup pitted and sliced cherries
2 tablespoons honey
1 tablespoon lemon juice
1 tablespoon butter
1 tablespoon cooking sherry
⅛ teaspoon ground cinnamon
⅛ teaspoon ground grains of paradise

Steps:

  • Combine apples, apricots, cherries, honey, lemon juice, butter, sherry, cinnamon, and grains of paradise in a large microwave-safe bowl. Cover with plastic wrap, making sure there is at least 1 inch clearance above the mixture and leaving 1 corner open to vent.
  • Microwave on high power for 10 minutes. Rotate the bowl a quarter turn halfway through if your microwave does not have a turn table. Uncover and microwave for 3 to 5 minutes if too much liquid was released by the fruit.
  • Mash fruit with a potato masher until desired chunkiness is reached. Serve immediately or cool and store in the refrigerator.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 7

8 apples, peeled, cored, and cut into chunks
1/3 cup water
1/4 cup sugar
1 teaspoon grated lemon zest (optional)
1 teaspoon vanilla extract (optional)
1/4 teaspoon ground cinnamon (optional)
1/4 teaspoon ground nutmeg (optional)

Steps:

  • In 2-quart microwave-safe dish, combine apples and water. Cover with lid or vented plastic wrap; microwave on HIGH (100%) 12-14 minutes or until apples are tender. (If microwave does not have carousel, rotate dish every 4 minutes). Stir in sugar and choice of flavorings.
  • Microwave on HIGH 3 minutes or until sugar dissolves. Stir and set aside to cool before serving. If finer texture is desired, mash or puree apple mixture and put through a strainer.

Tips:

  • Select the right apples: Use a variety of apples that are best for applesauce, such as Granny Smith, Honeycrisp, or Braeburn. These apples hold their shape well and have a good balance of sweetness and tartness.
  • Peel and core the apples: This is the most time-consuming part of making applesauce, but it's worth it to get a smooth, lump-free sauce. You can use a vegetable peeler or a paring knife to peel the apples, and then use an apple corer to remove the cores.
  • Cut the apples into small pieces: This will help them cook evenly in the microwave. Aim for pieces that are about 1-inch thick.
  • Add some flavorings: You can add a variety of flavorings to your applesauce, such as cinnamon, nutmeg, ginger, or cloves. You can also add a bit of sugar or honey to taste.
  • Cook the applesauce in the microwave: Place the applesauce in a microwave-safe bowl and cook on high power for 5-7 minutes, or until the apples are soft. Stir the applesauce every 2-3 minutes to ensure even cooking.
  • Mash the applesauce: Once the apples are soft, you can mash them with a potato masher or a fork. You can also use an immersion blender to puree the applesauce until it reaches your desired consistency.

Conclusion:

Microwave applesauce is a quick, easy, and delicious way to enjoy this classic fall treat. With just a few simple ingredients and a few minutes of your time, you can have a batch of fresh, homemade applesauce that's perfect for breakfast, lunch, or a snack.
