2 Tbsp water
salt
pepper
1-2 Tbsp shredded cheese (optional)
2 Tbsp shredded cheese
2 Tbsp pico de gallo
1 Tbsp salsa
whichever fillings & toppings you like!

Steps:

  • In a measuring cup, whisk together eggs, water, salt, and pepper.
  • Spray cooking spray to coat a microwave-safe plate. (I recommend using a plate with a bit of a lip around the edge!)
  • Pour egg mixture onto prepared plate. Add a sprinkle of cheese if desired, or omit to keep your microwave omelette dairy free.
  • Cover plate with plastic wrap, sealing around the edges. Cook omelette in microwave on high power for 2 minutes. (It WILL floof up in the microwave, but that's okay-just let it be!)
  • Carefully remove plate from microwave, remove plastic wrap, and allow to cool for about 2-3 minutes.
