Steps:
- Wash rice well. Place 2 cups rice in a rice maker (or pot), add 4 cups water, or enough water to just cover the rice with no grains sticking out.
- Add raisins, salt, cinnamon, saffron (optional) and then drizzle olive oil around in a circle over the rice mixture. Mix well with spoon so rice and ingredients are blended together. There should be enough cinnamon added to give off a strong scent of cinnamon. Adjust amount as needed.
- Cook rice in rice maker or pot and after rice is cooked, stir ingredients together one more time. Spoon onto large platter and serve with plain, nonfat yogurt.

INDIAN-STYLE RICE WITH CASHEWS, RAISINS AND TURMERIC
A colorful, fragrant Indian-style rice. If desired, for presentation purposes, the rice can pressed into a lightly-oiled bowl, inverted and unmolded on to a decorative serving plate, and then garnished with fresh cilantro and slices of lime and tomato.

Tips:
- Use high-quality ingredients: The better the quality of your ingredients, the better your raisin rice will be. Look for plump, juicy raisins, and use a fragrant, flavorful basmati rice.
- Soak the raisins: Soaking the raisins in hot water for 15 minutes before adding them to the rice will help them plump up and become even more flavorful.
- Toast the rice: Toasting the rice in a little bit of oil before adding the water will help give it a nutty flavor and prevent it from becoming sticky.
- Use a good ratio of water to rice: The ratio of water to rice is important for getting the perfect texture of raisin rice. A good rule of thumb is to use 1 1/2 cups of water for every cup of rice.
- Cook the rice over low heat: Cooking the rice over low heat will help it cook evenly and prevent it from burning.
- Fluff the rice before serving: Fluffing the rice with a fork before serving will help separate the grains and make it light and airy.
