- 1. Melt the butter in a heavy-bottomed pot and saute the onions over medium-low heat until they soften and turn golden brown (keep stirring and adjust the heat so they don't burn). Add the beef stock and simmer 10 minutes. Whisk the grated cheese into the soup and season with salt and pepper to taste. 2. To serve French Onion Soup "Au Gratin," pour into ovenproof soup crocks. MIMI'S CAFE CARROT BREAD - ORIGINAL RECIPE
This recipe is great. It makes a very light (not compact) carrot bread/cake and is so simple to make!! I substituted light muscovado sugar for the brown sugar and cake was darker than usual but just as yummy.

- Sift first five ingredients into a mixing bowl.
- In a separate bowl, whisk together the oil, sugar and eggs.
- Stir the liquid mixture into the flour; mix well.
- Add the next four ingredients; stir again.
- Grease and flour a 9-inch square pan or four mini-loaf pans. (Fill the pans 2/3 full with batter).
- Bake at 350* for about 40 minutes. (Mini loaves take about 30 minutes.).
- Yield: one 9-inch square, or four 3" x 6" mini-loaves.

- Preheat oven to 325 degrees. Place a large sauté pan over medium-high heat for 1 minute. Add 1/4 cup olive oil, and heat until shimmering. Add the onions and cook, stirring constantly and adjusting heat as needed, until the onions are soft and deep golden brown, about 20 to 25 minutes. Remove pan from heat and allow onions to cool in the pan.
- Brush both sides of the bread slices with the remaining 1 tablespoon olive oil and place on a baking sheet. Bake, turning once, until just crisp, about 4 minutes a side. Remove from oven and set aside.
- Pour 3 cups of water into a 2 quart saucepan. Cover and bring to a boil. Add miso, thyme, and cooked onions; mix well. Simmer and season with salt and pepper as needed.
- Preheat a broiler. Place a large oven-proof serving bowl or four small oven-proof bowls on a broiling pan or small baking sheet. Pour the hot soup into the large bowl or divide among the small bowls. Place the croutons on top of the soup, and top with Swiss cheese slices. Place the pan holding the soup directly under the broiler until the cheese is melted, and the soup is bubbling. Serve immediately.

I fell in love with the corn chowder at Mimi's and was unable to find a recipe that tasted like it here. I was able to find the actual recipe on Mimi's own site.

Steps:
- On medium heat, melt butter.
- Simmer onion and celery for 5 minutes until soft but not brown.
- Add water, potatoes, corn and seasonings.
- Cover and simmer for 30 minutes or until potatoes are barely tender.
- Whisk the flour into 1 cup of half & half and stir into soup.
- Add remaining 3 cups half & half.
- Simmer for about 15 minutes until soup thickens to creamy consistency.
- To make soup thicker, simmer another 5-10 minutes.
