MIMI'S MONSTER COOKIES

Mimi's Monster Cookies image

These are huge cookies that the kids will love to get their little hands on. They are great to take to picnics or gatherings. I used to take them to Sunday School picnics when my grandkids were little. I even did a double batch for a treat at AWANA. Adults like them, too. They have delicious flavor. You may notice that there is no flour in the recipe--that is correct--there is no flour. The oats bind it together.

MIMI'S BISCORTA COOKIES

Mimi's Biscorta Cookies image

This is from a hand-written recipe of my mom's, called "Biscorta - large recipe". It makes approximately 144 cookies! Mimi used to make these at Christmas time, usually with my younger sister. They are delicious. This is posted as Mimi wrote it, and it was handed down from her Polish immigrant mother. There's not a lot of detail, and no substitutions are mentioned. I remember these cookies being no larger than 2-3 inches long, (in pretzel shapes). I am guessing at the prep and cooking time (for 144 cookies). At the bottom of the recipe it says, "THIS IS ALOT OF DOUGH! VERY GOOD AND NOT TOO SWEET." Enjoy!

Tips:

  • Choose ripe bananas: The riper the bananas, the sweeter the cookies will be. Look for bananas with a bright yellow skin and no green tinge.
  • Use melted butter: Melted butter helps the cookies spread and gives them a chewy texture. Be sure to let the butter cool slightly before adding it to the other ingredients.
  • Don't overmix the dough: Overmixing the dough will make the cookies tough. Mix just until the ingredients are combined.
  • Chill the dough before baking: Chilling the dough helps the cookies hold their shape and prevents them from spreading too much in the oven.
  • Bake the cookies until they are just set: The cookies should be slightly brown around the edges and still soft in the center. Overbaking will make the cookies dry.

Conclusion:

Mimi's Sleep Tight Cookies are a delicious and easy-to-make treat that can help you relax and get a good night's sleep. The combination of oats, bananas, and chamomile gives these cookies a unique flavor and aroma that is sure to please everyone. Be sure to enjoy a glass of milk with these cookies before bedtime!
