2 lb. extra lean ground beef ((93% lean))
1 teaspoon fine sea salt
¼ teaspoon black pepper
2 teaspoons garlic powder
1 teaspoon onion powder
1/4 teaspoon cayenne pepper
4 oz reduced-fat cream cheese (cubed)
1 cup shredded cheddar (divided)
2 tablespoons chopped parsley (for garnish)

Steps:

  • Preheat your oven to 400 degrees F. Lightly spray a 2-quart casserole dish with olive oil and set it aside.
  • Heat a large nonstick skillet over medium-high heat. Lightly spray it with olive oil.
  • Add the ground beef to the skillet. Cook, stirring and breaking up the meat into small pieces, until the meat is no longer raw, about 5 minutes. Drain the beef and return it to the skillet.
  • Reduce the heat to medium. Mix the salt, pepper, garlic powder, onion powder and cayenne into the beef, then slowly and patiently mix in the cream cheese until fully melted and incorporated.
  • Turn the heat off, and mix 1/2 cup of the shredded cheddar into the beef mixture.
  • Transfer the mixture to the prepared 2-quart casserole dish. Sprinkle the remaining 1/2 cup cheddar on top.
  • Bake the casserole until the cheese is melted, about 10 minutes. Garnish with parsley and serve.

1 (10.75 ounce) can condensed tomato soup, NOT diluted
1 ½ cups beef broth
1 cup uncooked long grain white rice
1 tablespoon Worcestershire sauce
1 tablespoon minced fresh garlic
1 teaspoon dried Italian seasoning
½ teaspoon onion powder
Salt and pepper, to taste (about 1 teaspoon salt and ½ teaspoon pepper)
1 cup grated mozzarella cheese
¼ cup grated Parmesan cheese
Optional garnish: fresh chopped parsley or basil

Steps:

  • Preheat oven to 375 degrees. Spray a large baking dish (about 9 x 13 inches) with cooking spray.

3 medium white potatoes (pared, and sliced very thin)
1 lb lean ground beef
1/2 cup onion, chopped
1/4 cup celery, chopped
1 teaspoon garlic, minced
1 teaspoon celery leaves (fresh or dried optional)
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon red pepper flakes (spicy optional)
2 tablespoons butter
2 tablespoons flour
3/4 cup milk (add a little more if needed)
1/2 cup grated cheddar cheese
1/2 teaspoon nutmeg
1/4 teaspoon chili powder (optional)
1 pinch salt
1 pinch pepper
1 pinch paprika
grated cheddar cheese

Steps:

  • Spray a baking dish with cooking spray.
  • Preheat oven 375 degrees.
  • Spray a large skillet with cooking spray and brown ground beef.

1 lb minced beef
1 cup tomato sauce (or combination of sauces to taste)
2 teaspoons mixed herbs
3 cups grated cheddar cheese
2 beef bouillon cubes (equivalent to two teaspoons beef stock powder)
2 tablespoons cornflour (mixed in sufficient water to make a paste)
2 cups water
salt
fresh ground black pepper
1 dash olive oil or 1 dash preferred oil
salt and pepper
300 g egg noodles, fetteccine or linguine (I prefer egg noodles)

Steps:

  • Boil egg noodles (fetteccine or linguine) in water until al dente.
  • Rinse, drain and leave.
  • Brown minced beef in oil, stirring regularly.
  • Add crushed stock cubes (or powder).
  • Add water.
  • Stir in tomato sauce.
  • Add mixed herbs.
  • Stir in salt and pepper to taste.

  • Preheat your oven to 400F and move the rack to the middle position. Grease a 9x13 baking dish (I use Pam spray).
  • Boil a large, salted pot of water for the penne. Cook it for 10 minutes (it should be slightly underdone so it doesn't get mushy).
  • Add the oil, beef, and onion to a skillet. Sauté over medium-high heat, breaking the meat up as you go along, for 10 minutes. Once it gets going, stir in the garlic. Spoon out excess fat if needed.
