- Boil lobster tails. Cool. Remove meat from shells. Cut down center lengthwise. Break into pieces. Open pieces up and you will see swirls of meat. Finely shred out the swirls. The finer you shred the meat, the fluffier the finished dish will be. After all meat is shredded, set aside. Make a sauce of sauteed diced onion, tomato paste, whole tomatoes, minced garlic, thyme, lime juice, salt, and pepper. Simmer 15 minutes. Put shredded lobster in sauce and mix thoroughly. Drizzle 1/4 cup cooking oil over mixture. Cover and let simmer. The lobster will absorb the oil and sauce and puff up almost like a souffle. Serve hot as main dish. A truly gourmet dish is made by using minced lobster to stuff a whole red snapper. Bake in oven. Fit for a king! This recipe yields 6 to 8 servings.

- In a large skillet over medium-high heat, melt the butter.
- Add in the onion, garlic, and carrots; saute and stir frequently for 3 minutes or until onions are soft.
- Add in the bell peppers and saute another 2 minutes.
- Add in the lobster meat and cook 1 minute or until heated through; Set aside to cool for 10-15 minutes.
- Transfer lobster mixture to a large mixing bowl.
- Add in eggs, mayonnaise, parsley, and salt and pepper to taste; stir to mix well.
- Add 1 cup of bread crumbs to lobster mixture; toss to mix.
- Add more breadcrumbs if needed so that mixture barely holds it shape.
- Take 1/4 cup lobster mixture and shape cakes by hand.
- Pour oil into a large nonstick skillet to 1/4 inch depth; heat over medium heat.
- When very hot, add lobster cakes.
- Cook for about 3 minutes per side (for a 1-inch thick cake) or until golden brown on both sides.
- Remove from skillet and drain on paper-towel lined plate.
- Serve warm with your favorite sauce--we like honey mustard sauce.

- Rinse the lobster, and hold it belly up. At the bottom of the tail, there is a small opening, stick a long skewer in it to drain any urine left in its' body, then crack the tail off, chop the tail into small pieces, and crack the claws in half as well. If you know how to eat the body of the lobster, cut it up and throw it on the pile too.
- Heat half of the peanut oil in a deep heavy skillet over medium heat. Add the crushed garlic, and fry for about 1 minute. Throw in the lobster pieces, and fry until they are cooked through, about 4 to 5 minutes. Remove the lobster and garlic mixture to a dish and keep warm.
- Heat the remaining oil in the skillet. Add the minced ginger and pork, and fry until the pork is no longer pink. Pour in the chicken broth, and bring to a boil, stirring constantly. In a small bowl, mix together the sherry, soy sauce, cornstarch and brown sugar until well blended. Add the sherry mixture to the pan, and stir-fry for a minute or two, until the sauce becomes thick and somewhat clear.
- Stir in the green onions, and turn the heat off. Drizzle the beaten eggs over the mixture in the pan, and stir until the eggs are in little pieces. Finally, return the lobster to the pan, and cook over low heat for a few minutes to blend the flavors. Transfer to a serving dish, and let stand, covered, for a few minutes before serving. Eat with steamed rice and enjoy, cause you worked hard!

Freshly cooked lobster is preferred, but some may splurge and buy a pound of preshucked lobster meat. Serve with crusty French bread or toasted thick slices of baguette cut on a long diagonal.

- Put a large pot of water on to boil. Salt heavily: 1/4 cup per gallon. When water reaches a rolling boil, add lobsters headfirst, put on the lid and bring back to a boil. Continue boiling with lid slightly ajar, 8 minutes for a 1 1/2 pounder or 10 minutes for a 2 pounder. The lobster will not be fully cooked: It will cook further upon reheating.
- Remove lobsters from pot with tongs, and let cool in the kitchen sink. When lobsters are cool enough to handle, remove tails and claws (with knuckles attached) with a twisting motion. (Reserve bodies for another purpose or freeze for future use.)
- Using lobster crackers or mallet and kitchen shears, crack shells and remove meat from tail, knuckles and claws. For presentation, try to keep claw meat intact. Use a paring knife drawn down the middle of the tail meat to remove intestinal vein; rinse meat briefly if necessary. If you wish, wrap and refrigerate for up to 24 hours, or proceed immediately with rest of recipe.
- To finish, put half the butter in a skillet over medium heat. Add room-temperature lobster meat and bring to a low simmer. Turn heat to low, put on lid and cook for 5 minutes. Add remaining butter, turn off heat and cover for 5 more minutes.
- To serve, divide lobster meat into two warmed shallow soup bowls. Spoon butter evenly over each serving. Sprinkle with parsley, chives, dill, tarragon and chervil. Serve with lemon wedges, and dust with black pepper.
