Widely popular Russian dish, especially eaten during the Maslenitsa festival in Russia. All kinds of fillings are possible--sweet or savory.

4 ¼ cups milk
5 eggs
⅓ teaspoon salt
2 tablespoons white sugar
½ teaspoon baking soda
⅛ teaspoon citric acid powder
4 cups all-purpose flour
3 tablespoons vegetable oil
1 cup boiling water
⅔ cup butter, divided

Steps:

  • Beat together the milk and the eggs. Stir in the salt and the sugar and mix well. Add the baking soda and citric acid.
  • Blend in the flour. Add the vegetable oil and pour in the boiling water, stirring constantly. The batter should be very thin, almost watery. Set the bowl aside and let it rest for 20 minutes.
  • Melt a tablespoon of butter in a small frying pan over medium-high heat. Pick the pan up off the heat. Pour in a ladleful of batter while you rotate your wrist, tilting the pan so the batter makes a circle and coats the bottom. The blini should be very thin.
  • Return the pan to the heat. Cook the blini for 90 seconds. Carefully lift up an edge of the blini to see if it's fully cooked: the edges will be golden and it should have brown spots on the surface. Flip the blini over and cook the other side for 1 minute.
  • Transfer the blini to a plate lined with a clean kitchen towel. Continue cooking the blini, adding an additional tablespoon of butter to the pan after each 4 blini. Stack them on top of each other and cover with the kitchen towel to keep warm.
  • Spread your favorite filling in the center of the blini, and fold three times to make a triangle shape. You can also fold up all 4 sides, like a small burrito.

1 cup plain flour 150 gm / 5 ounces (all purpose flour)
2 tablespoons finely chopped chives
2 teaspoons finely grated lemon zest
2 teaspoons baking powder
3/4 teaspoon salt
2/3 cup milk
2 large egg yolks
1/4 cup unsalted butter, melted 60g / 2 ounces plus a little extra for greasing the frypan
2 tablespoons fresh lemon juice
4 large egg whites

Steps:

  • in a bowl combine the dry ingredients - flour, chives, zest, baking powder and salt
  • whisk the milk, butter, lemon juice and egg yolks together and add to the flour mixture till combined
  • in a separate bowl whisk the egg whites on high speed until they hold a medium peak
  • add beaten whites to the mixture and gently fold in quickly - see note
  • heat a non stick frypan over medium heat and grease lightly with a little butter - see note
  • drop small scoops or spoonfuls of batter onto the pan and cook for about 90 seconds on each side (watch for small bubbles)
  • transfer blini onto a cake rack in a single layer
  • serve, store or freeze till ready to use

2 egg yolks
1/2 cup sugar
1/2 cup cold melted butter
1/2 cup brown sugar
1 teaspoon cinnamon
2-3 loafs pepperidge farm thin sliced white sandwich bread
fruit to dip in(frozen berries)

Steps:

  • combine cream cheese.egg yolks and sugar set aside combine brown sugar and cinnamon and set aside cut crust of bread. using a rolling pin,roll each slice of bread until flat. put a teaspoon of cream cheese mixture in the edge of each slice of rolled bread and roll into a tube. brush melted butter onto each mini blini and then roll in sugar mixture place mini blinis on ungreased cookie sheet(they freeze good,put on cookie sheet freeze then put them in a ziploc) bake at 350 degree 15-20 minutes-until done can dip in fruit before serving if frozen bake at 400 10-15 minutes

1 cup Milk
1 Egg
1/4 cup Creme Fraiche, Sour Cream or Full-Fat Greek Yogurt
1/2 lb Smoke Salmon, thinly sliced
Fresh Dill Sprigs, for topping

Steps:

  • Heat griddle or large nonstick skillet over medium-high heat (about 375°F). Grease with vegetable oil or butter.
  • In large bowl, stir pancake mix, milk and egg with whisk or fork until smooth. Drop batter in tablespoons onto hot greased skillet.
  • Cook 1 to 2 minutes until bubbles begin to form on surface and edges are dry. Turn; cook about 1 minute more or until golden brown. Transfer to plate. Repeat with remaining batter.
  • To serve, top each pancake with a dollop of creme fraiche, a small, thin slice of smoked salmon and a sprig of dill.

1 cup buckwheat pancake mix (we like the unsweetened organic one from Whole Foods, but you can use any unsweetened kind and follow the package instructions for all pancake ingredients, using an egg if called for)
1/2 teaspoon kosher salt
1 egg
1 tablespoon melted butter or vegetable oil
2/3 cup milk (any fat content) or water
Black caviar (our favorite is paddlefish)
Crème fraîche
Chives, snipped
Smoked salmon (optional)
Minced red onion (optional)

Steps:

  • 1. Combine the pancake mix with the salt, egg, butter or oil, and milk or water.
  • 2. Lightly brush another tablespoon of melted butter onto a skillet over medium-high heat.
  • 3. When the skillet is hot, spoon the batter into it a tablespoon at a time.
  • 4. Cook the blinis until tiny bubbles appear, about 1 minute, then flip them and fry until golden brown on each side.

1 cup buckwheat flour
1 package active dry yeast
1 tablespoon sugar
1/2 teaspoon salt
2 cups warm milk
6 tablespoons butter, melted
3 eggs, lightly beaten
Butter for frying
Sour cream and sturgeon, salmon or golden caviar

Steps:

  • Combine flours, yeast, sugar and salt in a bowl. Stir in warm milk, butter and eggs and mix until smooth.
  • Set bowl aside in a warm place such as an oven with pilot light on and allow to rise until double in volume, about two hours. Stir batter.
  • Heat a large, heavy skillet and lightly butter it. Make blini with about a tablespoon of batter each, turning them as they brown and browning the other side. 1/2 cup sugar
2 egg yolks
2 loaves white bread, thin sliced with crusts trimmed (1lb.each)
