Time 1h

Yield 12

Number Of Ingredients 13

1 ½ cups all-purpose flour
¼ cup Dutch-process dark chocolate cocoa powder
1 ½ teaspoons baking powder
⅔ cup white sugar
½ cup whole milk
½ cup vegetable oil
2 large eggs, at room temperature
1 teaspoon vanilla extract
½ cup seedless raspberry preserves
1 ½ cups powdered sugar
½ cup unsalted butter, softened
1 teaspoon vanilla extract
1 tablespoon milk, or more as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 12-cup muffin tin with paper liners.
  • Sift flour, cocoa powder, and baking powder together in a bowl. Whisk sugar, milk, oil, eggs, and vanilla extract together in another bowl. Gradually add flour mixture to sugar mixture, whisking until combined. Spoon batter into the prepared muffin cups, filling each 2/3 full.
  • Bake in the preheated oven until a toothpick inserted into the center of a cupcake comes out clean, 12 to 15 minutes. Allow to cool in the tin for 5 to 10 minutes. Transfer to a cooling rack to cool completely.
  • Place raspberry preserves into a pastry bag fitted with a round tip. Insert the tip into each cupcake and squeeze about 1 tablespoon of filling into the center of each.
  • Beat powdered sugar and butter for frosting together using a hand-held electric mixer until creamy and smooth. Beat in vanilla extract. If frosting seems too dry, add milk to reach desired consistency. Frost cooled, filled cupcakes.

Tips:

  • Use fresh raspberries for the best flavor. Frozen raspberries can also be used, but they should be thawed and well-drained before using.
  • If you don't have a mini muffin pan, you can use a regular muffin pan. Just fill each muffin cup about 2/3 full.
  • The cupcakes can be baked ahead of time and stored in an airtight container at room temperature for up to 2 days, or in the freezer for up to 2 weeks.
  • To make the chocolate ganache, use good quality chocolate. The higher the cocoa content, the richer the flavor will be.
  • If you don't have heavy cream, you can use milk instead. However, the ganache will not be as thick and creamy.
  • The ganache can be made ahead of time and stored in the refrigerator for up to 2 weeks. When you're ready to use it, reheat it gently in the microwave or over a double boiler until it is smooth and pourable.

Conclusion:

These mini raspberry-filled chocolate cupcakes are the perfect treat for any occasion. They're easy to make, delicious, and sure to impress your friends and family. So next time you're looking for a sweet treat, give these cupcakes a try!
