1 bunch fresh mint, chopped
1/4 cup lemon juice, from about 1 lemon
1/4 cup simple syrup, recipe follows
1/8 teaspoon amaretto
2 cups watermelon balls, from about half a watermelon
2 cups cantaloupe balls, from about 1 cantaloupe
1/2 cup water
1 cup sugar

Steps:

  • In a blender, combine mint, lemon juice, simple syrup, and amaretto. Blend until smooth.
  • In a large bowl, combine the watermelon and the cantaloupe. Add the vinaigrette and toss. Transfer to a serving bowl and serve.
  • In a saucepan, combine water and sugar over medium heat. Bring to a boil, then reduce heat and simmer for 5 minutes, until the sugar has dissolved. Take pan off heat and cool the syrup. Any extra cooled syrup can be saved in an airtight container in the refrigerator.

2 large beets (about 1 pound)
1/3 cup 2-percent plain Greek yogurt
1 tablespoon low-sodium vegetable broth or water
2 teaspoons white balsamic vinegar
2 teaspoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 tablespoons fresh small mint leaves
1 tablespoon roasted or raw unsalted pistachios, chopped

Steps:

  • Wrap the garlic cloves together in a piece of parchment paper; wrap each beet separately in parchment. Place the garlic and beets in a microwave-safe dish and cook for 3 minutes. Remove the garlic and set aside, still wrapped. Continue to cook the beets in intervals of 2 minutes, until they can be easily pierced with a knife, 8 to 10 minutes. Let sit wrapped in parchment to complete the cooking process and until cool enough to handle, about 15 minutes.
  • Meanwhile, whisk together the yogurt, broth, vinegar, oil and 1/8 teaspoon salt in a small bowl. Peel the garlic cloves, mash completely and whisk into the vinaigrette. 1 cup cherry tomatoes, halved

  • Preheat oven to 425 degrees. Whisk together the oil, lemon juice, salt and pepper.

1 cup mirin (sweet sake)
1 tablespoon chopped ginger
2 tablespoon sesame oil
2 cups chopped scallions
1 tablespoon dried red chile flakes

2 racks lamb (about 2 pounds each), trimmed
Salt and freshly ground pepper
1 tablespoon honey
1/2 tablespoon chopped ginger

1 egg yolk*
Dash chili oil

Steps:

  • Prepare the marinade: In a bowl, mix together all the marinade ingredients. Pour them over the lamb and let it marinate for 1 hour. Remove from the marinade and let stand until ready to cook.
  • While the lamb is marinating, prepare the vinaigrette.
  • Season the lamb with salt and pepper and place it on a hot grill. Grill medium rare, about 15 to 20 minutes; or cut the rack into chops and saute them in a pan over high heat for about 2 minutes on each side. (Cook the chops in several batches, if necessary, but don't crowd the pan.)
  • Make an island of the sauce on each plate. Place lamb chops on center. Decorate with cilantro or mint sprigs on top and serve with stir-fried vegetable or stir-fried rice.
  • To make the vinaigrette, combine all the ingredients, except the oil, and blend. Slowly add peanut oil. Season with salt and pepper and strain, if necessary, into a bowl.

2 skinless, boneless chicken breast halves
1 1/2 teaspoons curry powder
1 teaspoon freshly ground black pepper

2 tablespoons peanut oil or vegetable oil
2 large egg yolks, beaten*
1/4 cup rice wine vinegar
2 tablespoons finely chopped fresh mint leaves
1 tablespoon soy sauce

1/2 cup regular or roasted peanut oil
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper

Steps:

  • Soak the bamboo or wooden skewers in water for 30 to 60 minutes.
  • With a sharp knife, cut each chicken breast lengthwise into 12 long, thin strips. Thread 1 strip onto each of the skewers, weaving the skewer back and forth along the length of each chicken strip. Arrange them on a large platter or baking tray.

  • Preheat a hinged indoor grill or panini maker, according to the manufacturer's instructions, or preheat a broiler, outdoor grill, or stovetop grill pan. Grill the skewers, in batches if necessary, until cooked through and nicely browned, about 2 minutes total on a hinged grill or panini maker or 2 minutes per side in the broiler, in a grill pan, or on an outdoor grill. If using an indoor grill, take care that the skewers don't prevent the grill or panini maker from closing properly.
  • Serve the skewers immediately, passing the vinaigrette for guests to drizzle over their own skewers or to use as a dip.

3 tablespoons lemon juice
1 to 2 tablespoons olive or vegetable oil, if desired
1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried mint leaves
1/2 teaspoon salt
1/8 teaspoon pepper
1 small clove garlic, finely chopped
6 cups bite-size pieces assorted salad greens
2 cups cut-up cooked chicken
1/3 cup crumbled feta cheese
1 medium tomato, cut into wedges
1/2 cucumber, cut lengthwise in half, seeded and cut into 1/4-inch slices
1/2 green bell pepper, coarsely chopped
2 medium green onions, sliced (2 tablespoons)
12 kalamata or pitted ripe olives

Steps:

  • In tightly covered container, shake all vinaigrette ingredients until well blended.
  • In large bowl, mix all salad ingredients. Add vinaigrette; toss to mix.

1 tablespoon Sherry wine vinegar
1 teaspoon honey
1/4 teaspoon aniseed
3 tablespoons thinly sliced fresh mint, divided
2 tablespoons olive oil
4 cups (packed) mixed baby greens (about 3 ounces)
4 honeydew melon wedges, peeled
6 thin slices prosciutto

Steps:

  • Whisk first 3 ingredients and 1 tablespoon mint in small bowl; whisk in oil. Season dressing to taste with salt and pepper. Toss greens with 2 tablespoons dressing in medium bowl; divide between 2 plates. Place melon next to greens; drape prosciutto over melon. Drizzle remaining dressing over prosciutto and melon. Sprinkle with remaining 2 tablespoons mint and freshly ground pepper and serve.
