3/4 teaspoon coarse salt

  • In a large skillet, melt 1 tablespoon butter over medium-low heat. Add 2 thinly sliced scallions (below); cook, stirring occasionally, until tender, about 2 minutes.

1 pound (500 grams) frozen peas

  • Heat the oil in a pan and add the chopped onions, mint, and peas. Cover and leave for a few minutes to steam. Mash with a potato masher. You can do this with a food processor as well, just pulse it until smooth. Whether mashing or pulsing, when it's done add the butter and season very carefully, to taste.

4 cups peas

  • Dissolve all but 1/4 teaspoon salt in large pot of boiling water. Add peas. Blanch 2 minutes. Drain and rinse under cold water. Chill and drain thoroughly.   • Divide mixture among 6 greased 1/2 cup ramekins or custard cups. Set ramekins in baking pan. Add boiling water to pan to halfway up sides of ramekins. Cover with foil and vent. Bake in a preheated 350 degree oven for 30 minutes or until toothpick inserted in center pulls clean. Let set a few minutes. Run sharp knife around edges and invert onto serving dish. Garnish with mint sprig and dollop of sour cream or creme fraiche.

1 shallot, minced (about 2 tablespoons)
Zest of 1 lemon

2 tablespoons freshly chopped mint

  • Cook orzo according to package directions. Melt butter in a medium saucepan over medium heat. Add shallot and lemon zest, and saute until translucent.

1 rack of lamb (6-8 point)
1 cup mint leaf
1 clove garlic, chopped
1 tablespoon red wine vinegar
1 pinch sugar
2 tablespoons olive oil
1 (200 g) medium new potatoes
400 g frozen peas or 400 g fresh peas
3 tablespoons butter
3/4 cup mint leaf

Steps:

  • Preheat the oven to 200 degrees C.
  • Place the lamb on a rack in a baking dish.
  • Place the mint, garlic, vinegar and sugar in a food processor and work until a paste forms.
  • Add the olive oil slowly to the mixture adding a little more if the mixture seems too thick-if the mixture seems too runny, add a few more mint leaves.
  • Season to taste.

4 lamb fillets
1 tablespoon olive oil
25 g butter
1 large shallot
3 garlic cloves, crushed
2 slices bacon, sliced thinly
100 ml dry white wine
1 teaspoon chicken stock

1/2 cup frozen peas
100 ml cream
2 tablespoons of fresh mint, finley chopped
1 1/2 teaspoons cornflour
