1 tablespoon olive oil
1 small onion, finely chopped, about 1/2 cup
1 bay leaf

3 cups hot chicken broth

  • Preheat oven to 350 degrees.
  • Examine the rice for foreign objects, but do not wash.

1 1/2 cups chicken or vegetarian broth
1 1/2 cups water
1 medium-size onion (about 6 ounces), peeled and finely chopped
2 tablespoons olive oil
1 1/2 cups converted white rice, or basmati
1/2 teaspoon kosher salt
Freshly ground black pepper to taste

Steps:

  • Place mint stems, chicken broth and water in a 2 1/2-quart souffle dish or casserole with tight-fitting lid. Cook, covered, at 100 percent power in a 650- to 700-watt oven for 10 minutes. If using plastic, prick to release steam.
  • Remove from oven and uncover. Strain liquid and allow liquid to cool to room temperature. Reserve.

250g bunch asparagus , cut in bite-size pieces
1 red pepper , seeded and chopped
3 tbsp olive oil
garted zest and juice 1 lemon
2 x 125g packs mini mozzarella , halved (or 2 x 125g balls mozzarella, chopped)
1 large bunch mint leaves, shredded

What you'll need:

  • 1 cup long-grain rice, such as basamati or jasmine
  • 3 1/2 cup unsalted chicken or veggie broth
  • 2 cup water
  • 1/2 cup fresh cilantro leaves, for garnish
  • 1 medium cucumber diced into 1/4 inch cubes
  • 1 medium red or yellow sweet peppers diced into 1/4 inch cubes
  • 1 cup fresh peas
  • 1 cup fresh carrots shredded
  • 1/2 cup sweet red onions diced
  • 1/4 cup fresh flat-sliced green onions
  • 1/2 cup fresh or thawed corn kernels
  • 1/2 cup blanched slivered almonds
  • 1/3 cup fresh or thawed peas
  • 1/2 cup fresh parsley
  • 1/2 cup fresh dill
  • 1/2 cup fresh or thawed peas
  • 1/4 cup white vinegar or apple cider vinegar
  • 1/4 cup light mayonnaise
  • 1 avocado mashed
  • 1/4 cup butter
Instructions:
  1. In a large pot, bring water, chicken or veggie broth, and butter to a boil over medium heat. Add 1 cup of long-grain rice, return to a boil, and then reduce heat to low. Simmer uncovered for 15-20 minutes, or until rice is soft. Drain the rice well.
  2. While the rice cooks, prepare the vinaigrette. In a medium bowl, whisk together 1/2 cup apple cider vinegar or white vinegar, 1/4 cup mayonnaise, 1/2 cup parsley, 1/2 cup dill, 1/4 cup minced red onions, and 1/4 cup minced celery. Season with salt and freshly ground black peppers, to taste. Set the vinaigrette mixture to the side.
  3. Once the rice is drained, transfer it to a large bowl and let it cool. Add the vinaigrette mixture to the bowl with the cooled rice. Toss until the rice is evenly coated in the vinaigrette. Set the bowl to the side.
  4. Next, prepare the other ingredients. Dice 1 medium cucumber, 1 medium red or yellow sweet peppers, 1/2 cup sweet red onions, and 1 cup fresh carrots into 1/4 inch cubes. Grate 1/2 cup of fresh carrots and shred 1 cup of fresh carrots. Chop 1/2 cup fresh parsley and 1/2 cup fresh dill.
  5. Add all of the prepared ingredients to the large bowl with the rice and vinaigrette mixture. This includes the diced cucumber, sweet peppers, red onions, carrots, grated carrots, parsley, dill, peas, and corn. Toss together until the ingredients are evenly distributed throughout the rice mixture.
