4 pounds sweet potatoes, peeled and cut into 1⁄2-inch-thick rounds
1/2 cup salted butter
3/4 cup granulated sugar
3/4 cup packed light brown sugar
1/4 cup heavy cream
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350°F. Layer sweet potato slices in a lightly greased 13- x 9-inch baking dish.
  • Melt butter in a small saucepan over medium. Add sugars, stirring until well combined. Stir in cream; cook, stirring often, just until mixture comes to a simmer, 5 to 7 minutes. Remove from heat; stir in vanilla extract, cinnamon, salt, and nutmeg.
  • Pour sugar mixture evenly over sweet potatoes, and cover with lightly greased aluminum foil.

6 tablespoons unsalted butter
1/2 cup firmly-packed dark brown sugar
1/3 cup granulated sugar
1 teaspoon pumpkin pie spice
1/2 teaspoon kosher salt, plus more to taste
1/4 cup pecans

Steps:

  • Cut the sweet potatoes crosswise into 1-inch-thick rounds. Halve or quarter any extra-large pieces so that they are all similar in size.
  • Melt the butter in a large Dutch oven over medium heat. Combine the brown sugar, granulated sugar, pumpkin pie spice and salt in a small bowl. 1 lemon, thinly sliced with peel and seeded
1 cup granulated sugar
1/4 lb unsalted butter
1/4 cup orange juice, freshly squeezed
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt

Steps:

  • Combine sugar, butter, orange juice, cinnamon, nutmeg, and salt in small sauce pan and heat gently to boiling, stirring frequently.
