White Chocolate and Mixed Berry Muffins image

I got the original recipe from www.taste.com.au, but it uses buttermilk. What a fatty! As I don't want to eat my muffins in guilt, I made them using skim milk - and they turn out just nice.

Tips:

  • Choose the right berries: Use a variety of fresh or frozen berries for the best flavor and texture. Berries that are in season will be the sweetest and most flavorful.
  • Don't overmix the batter: Overmixing the batter will make the muffins tough. Mix just until the ingredients are combined.
  • Use muffin liners: Muffin liners will help the muffins to come out of the pan easily and will also prevent them from sticking to the pan.
  • Fill the muffin tins halfway: The muffins will rise as they bake, so only fill the muffin tins halfway to avoid overflowing.
  • Bake the muffins at a high temperature: Baking the muffins at a high temperature will help them to rise quickly and develop a golden brown crust.

Conclusion:

Mixed berry muffins are a delicious and easy-to-make treat that can be enjoyed for breakfast, lunch, or a snack. With a few simple tips, you can make perfect mixed berry muffins every time. So next time you're looking for a sweet and satisfying treat, give these mixed berry muffins a try!
