2 bunches collard greens
2 bunches mustard greens
2 bunches turnip greens
3 tablespoons salt
4 cups chicken broth, divided
½ cup vegetable oil
4 cloves garlic, sliced
½ cup cooked real bacon bits

Scoop up the greens and allow to drain in a colander; discard used chicken broth. Do not rinse the greens.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and save time.
  • Choosing the Right Bacon: Select high-quality bacon that is thick-cut and has a good amount of marbling. This will ensure that the bacon is crispy and flavorful.
  • Spicing the Bacon: Use a combination of five spices (Chinese five-spice powder, salt, pepper, garlic powder, and onion powder) to create a flavorful bacon. The spices will help to enhance the natural flavors of the bacon.
  • Cooking the Bacon: Cook the bacon in a single layer in a large skillet over medium heat. This will help the bacon to cook evenly and prevent it from sticking to the pan.
  • Poaching the Eggs: Bring a large pot of water to a gentle simmer. Add the eggs and cook for 3-4 minutes, or until the whites are set and the yolks are still runny.
  • Assembling the Salad: Toss the mixed greens with the dressing and divide it among four plates. Top each salad with the bacon, poached egg, and avocado slices.
