- Combine soaked lentils, diced onions, diced carrots, minced garlic, tomato sauce, water, curry powder, salt, and ground pepper in the slow cooker.
- Mix well to combine, ensuring that the ingredients are evenly distributed.
- Turn the slow cooker on to "high" setting, cover and cook for the next 5 hours until lentils are tender. Alternatively if you are preparing the lentils in the morning and will be out the whole day, set the slow cooker to the "low" setting and cook for at least 8 to 10 hours until lentils are tender.
- Once lentils are tender, check to see if curry is too thick for your liking. If too thick, add 1/2 cup water and mix well and let sit for another 5 minutes in the slow cooker before serving.
- Serve this delicious lentil curry with white rice and fresh chopped parsley for garnish.

Steps:
- Rinse lentils in strainer and sort through, removing debris.
- Heat 1 TBS broth in medium soup pot. Saute onion in broth over medium heat for 5 minutes stirring frequently, until translucent.
- Add garlic, carrots, celery, and cabbage. Continue to sauté for another couple of minutes.
- Add curry powder and mix to bring out its flavour.
- Add rinsed and drained lentils, broth and tomatoes.
- Bring to a boil, reduce heat to medium low, and simmer uncovered until lentils and vegetables are tender, about 30 minutes.
- Add cilantro and season with salt and pepper to taste.
- Serve over rice / toast / etc.
- Notes:.
- I rarely have fresh cilantro so substitute 1-2TBS dried coriander. Usually end up forgetting it altogether though.
- I play fast and loose with the quantities - very forgiving recipe.
- Servings are a guess, I tend to make lots and use up all the vegies I can find.

- Cook sliced radish, sliced chicken and mashed lemon grass in 2L of hot water for 2 hours.
- Strain out and add water to make 2L stock.
- Finely chop chilli pepper. Coarsely chop onion and tomato.

- Rinse lentils a few times until water appears clear.
- Add all ingredients into a large slow cooker. Save rock salt for later.
- Add in stock.
- Give it a good stir.
