Time 15m

Number Of Ingredients 8

1 Tbsp plain knox gelatin
2 Tbsp cold water
1/2 c very strong liquid coffee
3 large eggs, separated
1/2 c granulated sugar
1 pinch salt
2 tsp vanilla
whipped cream for garnish

Steps:

  • 1. Soften gelatin in cold water for about 5 minutes, then set cup in hot water to dissolve. Stir to blend. --- Beat egg yolks in top of double boiler, until lemony yellow in color, then beat in sugar and salt.
  • 2. Add warm coffee and heat until mixture is thick and coats the back of a spoon(until mixture is opaque in color). Add vanilla and gelatin mixture; blend well.
  • 3. Beat egg whites until stiff but not dry. Fold into the coffee mixture. Pour mixture into a 4 cup mold or small dessert dishes. Chill until firm; then unmold and serve with whipped cream or Cool Whip. Great with caramel sauce drizzled over top too!

Tips:

  • Choose high-quality ingredients: Use real butter, dark chocolate, and freshly brewed coffee for the best flavor.
  • Don't overmix the batter: Overmixing can result in a tough, dense loaf. Mix just until the ingredients are combined.
  • Bake the loaf until a toothpick inserted into the center comes out clean: This will ensure that the loaf is cooked through.
  • Let the loaf cool completely before glazing: This will help the glaze to set properly.
  • Store the loaf in an airtight container at room temperature for up to 3 days: You can also freeze the loaf for up to 2 months.
