I made this recipe before McDonalds had Frappes, and before I knew what one was. I wanted to make a shake inspired from a Snickers Icecap thats made in a local expresso shop. I took a few ideas from several mocha shakes, frozen lattes, and iced coffee recipes and combined some of the ideas to make my own version of this simple frozen coffee treat! Note: cooking time is time to freeze coffee.

I worked as a barista for 2 years and I tend to be very picky when it comes to specialty coffee drinks. Living in an area where there is a coffee stand on every corner I have tasted so many different versions on each drink so I know that though everyone will use the same ingredients for the most part, quantities and quality matter! This is my simple yet satisfying Mocha Frappe. Although I am sure many might think to substitute for the ingredients to suit their tastes/diet or to use what they have on hand, I hope you will reconsider and use store bought chocolate milk if you can because it is thick and creamy which will make a difference. For variations to this recipe you could add a bit of coconut extract or other flavors, or even flavor syrups. And top with whip cream to make it extra delicious! If you don't have the chocolate milk it is ok to substitute with half and half (can be fat free) and some chocolate syrup as I have found that still gives it enough thickness.

MOCHA FRAPPE'S DRY MIX & OTHER INGREDIENTS TO MAKE MOCHA FRAPPE
2 c sugar
1 c non-fat dry milk powdered
1 c powdered non-dairy creamer
1/3 c baking cocoa
1/4 tsp salt
1/2 c water
3 Tbsp dark coffee like a good french roast plus enough milk to equal 1/2 cup (decaffe can be used)
1 Tbsp chocolate sauce
2 1/2 c ice with an additional 1 cup later in process

Steps:

  • 1. Mix first 5 ingredients and place in an air tight container. The Dry Mocha Frappe Mix will be good for one year.
  • 2. More power to you if you have a Frappe Machine but if not you can use a blender. Hopefully the blender will have a Frappe button on it. The directions will incorporate both appliances when necessary.
  • 3. Brew 3 Tablespoons coffee in 1/2 cup water in Frappe Machine or your coffee maker. You will end up with about 1/3 cup of coffee after it is brewed so you want to add enough milk to equal 1/2 cup.
  • 4. Take 2/3 cup of the Mocha Frappe Dry Mix and place in blender of choice. Add 1 Tablespoon Chocolate Sauce and the 1/2 cup brewed coffee and milk.
  • 5. If using a Frappe machine, add ice cubes up to the max line. If using a blender, add approx. 2 1/2 cups ice cubes. Put top on container and place on appliance. Push the blend button on Frappe machine or the Frappe button on Blender and blend until ice is pretty well broken up.
  • 6. Stir mixture and add more ice cubes up to and a little bit higher than the maximum level line on the Frappe machine or an additional 1 cup of ice cubes to the blender. At this point you will blend and stir, blend and stir and blend and stir until the mixture begins to swirl around on its own and you will see a lighter line rise from the bottom.
  • 7. Keep blending, without stopping, until the lighter line rises to the top and the mixture is all one color. When this happens you have reached the right consistency which is similar to a milkshake.
  • 8. Pour into your serving glass(es) and top with the Whipped Topping and drizzle with the Chocolate Sauce. Serve with straw.
  • 9. Hint: I use our insulated glasses that keeps the Frappe from melting quickly but any large glass will work. Makes one large or two smaller servings. This process may take a little practice but I promise you, it is well worth the effort!

1/3 c instant coffee granules (freeze-dried type, crushed)
1 c sugar
1 c dry instant milk powder
dash(es) salt
3/4 c non-dairy creamer (like Cremora or Coffee-Mate)
1/2 c Dutch cocoa (like Hershey's)

Steps:

  • 1. To make the mix, gather the ingredients.
  • 2. Mix all dried ingredients in a Ziploc-type bag. Knead with hands until mixed well.
  • 3. To make the caramel mocha frappe, put a couple of handfuls of ice in a blender.
  • 4. Pour in 1/2 cup of the powdered mix.

2 tsp instant coffee dissolved in as little hot water as possible
1/2 pkg small package sugar free instant pudding, chocolate or vanilla
1 generous handful of ice cubes
1/2 tsp vanilla extract, optional

  • 1. You need a good blender for this to avoid chunks of ice remaining in your drink. You may also substitute a lesser amount of espresso powder for the instant coffee. We don't have espresso powder here.
  • 2. Blend the almond milk, coffee concentrate and pudding mix until thickened and smooth. You may add vanilla and extra sweetener if you wish, the pudding mix has always been plenty sweet for me. I mix the coffee and hot water in my tall plastic "to go" cup so I can just pour the drink in on top when done.
  • 3. Add a handful of ice cubes and blend until smooth. If too thin, add a few more cubes until you reach your desired consistency.
