MOCHA GRANOLA
I can no longer find my favorite coffee and chocolate granola in stores anymore, so decided to try and replicate it by using the ingredient list and tweaking several different recipes. This is the end result that I enjoy having with milk or as a topping for chocolate pudding or coffee ice cream.

Steps:
- Preheat the oven to 325˚ F. Line a baking sheet with parchment paper or a silicone baking mat. Place a large skillet over medium heat. Add the chopped hazelnuts and almonds. Cook, stirring occasionally, until lightly browned, 3-4 minutes. Stir in the oats and canola oil and continue to cook, stirring occasionally, until the oats are lightly toasted, about 3 minutes. Transfer the oat mixture to a large bowl and stir in the honey, espresso powder, ground flaxseed, cinnamon, nutmeg, and salt. Spread out onto the prepared baking sheet in an even layer. Bake, stirring every few minutes, until the granola is light golden brown, about 15 minutes. Move the granola to one side of the baking sheet and press gently into a thick slab. Let cool to room temperature. Break the dried and cooled granola into small clusters, mix in the chopped chocolate, and store in an airtight container.
Tips for Making the Best Mocha Granola:
- Use Fresh Ingredients: Fresh nuts, seeds, and spices will give your granola the best flavor. Avoid using pre-packaged or stale ingredients, as they can make your granola taste bland or rancid.
- Toast Your Oats: Toasting your oats before adding them to the granola will give them a nutty flavor and make them more crispy. You can toast them in the oven or in a skillet over medium heat.
- Use a Variety of Nuts and Seeds: Different nuts and seeds will give your granola a variety of textures and flavors. Some good options include almonds, walnuts, pecans, chia seeds, and flaxseeds.
- Add Spices and Sweeteners: Spices like cinnamon, nutmeg, and ginger will add warmth and flavor to your granola. You can also add sweeteners like honey, maple syrup, or brown sugar to taste.
- Bake Your Granola at a Low Temperature: Baking your granola at a low temperature will help it to crisp up without burning. Aim for a temperature of 300 degrees Fahrenheit or less.
- Store Your Granola Properly: Once your granola is baked, store it in an airtight container in a cool, dry place. It will keep for up to two weeks.
