The only difference today is that I can't get home-smoked ham like those Grandpa used to cure in his old-fashioned smokehouse. But that never matters to hungry folks at the table-Grandma's recipe is a winner every time!"

MINI HAM LOAVES

Mini Ham Loaves image

This is a family favorite. My aunt used to make them every Easter. The recipe comes from an old church cookbook. Whenever I order the meat from the meat market, I order ground ham and pork from a local meat market premixed. I order triple the meat required, packaged into three packages, give one to my mother, use one, and freeze one to use later. Serve these with horseradish.

Tips:

  • Select the Right Beans: Use large white beans or cannellini beans for a texture that closely resembles ham.
  • Soak the Beans Properly: Soaking the beans overnight or for at least 8 hours helps soften them and reduces cooking time.
  • Use a Food Processor: A food processor makes it easy to grind the beans into a smooth and even consistency.
  • Add Smoky Flavors: Incorporate liquid smoke, smoked paprika, or roasted garlic powder to impart a smoky ham-like flavor.
  • Don't Overmix: Overmixing the bean mixture can result in a dense and dry loaf. Mix just until the ingredients are well combined.
  • Bake at the Right Temperature: Bake the mock ham loaf at 350°F (175°C) for about an hour or until it reaches an internal temperature of 165°F (74°C).
  • Let it Rest: Allow the mock ham loaf to rest for 10-15 minutes before slicing and serving. This helps the flavors meld and the loaf to firm up.
