MOIST LOW-FAT APPLE SPICE CAKE
My boyfriend and I invented this recipe for his mom's birthday and it came out great! It is very moist, with a denser texture than most cakes. Due to the large amount of apples, you can use less fat, and eggs are not needed at all. For best results, use firm, tart apples such as McIntosh, Courtland or Fuji.

Steps:
- Preheat oven to 350 degrees.
- In a large bowl, beat together the brown sugar with the margarine until smooth. Beat in the buttermilk.
- In a smaller bowl, combine the flour, salt, baking soda and powder, and spices. Add the flour mixture and chopped apples/applesauce to the sugar-buttermilk mixture. Wisk vigorously or blend in an electric mixture for several minutes, or until well blended.
- Coat the inside of a bundt cake pan with butter or margarine, and then cover with a thin layer of flour to prevent sticking. To the bottom and sides of the pan, add the crushed pecans. If desired, additional pecans may be used on the sides of the pan or added to the cake batter.
- Pour the batter into the greased/floured pan, and bake at 350 degrees for 40-45 minutes or until a wooden toothpick comes out clean. Remove the pan and allow to cool on a wire rack. Once cool, invert onto a serving dish.
- To make the icing: Using a fork, combine the powdered sugar and salt in a small bowl with the vanilla. Gradually add the milk while stirring, until it reaches the desired consistency. Drizzle over the top and sides of the cake.

Steps:
- Preheat the oven to 180C. Grease a deep baking tray.
- Mix sugar, yoghurt and eggs in a large bowl.
- Stir in apple and dried fruit.
- Combine flour, bicarb and spice by sifting together into the mixing bowl.
- Gently mix everything together, and then pour into the tin.
- Bake for 25-30 mins until springy and easing away from the edges of the tin.
- Combine icing sugar and juice with a fork and then drizzle runny icing over warm cake.
- Cut into portions as soon as the icing is set. When the cake is cool, store it in an airtight plastic tub.
Tips:
- Use fresh apples: Fresh apples provide the best flavor and texture for this cake. If you don't have fresh apples, you can use frozen or canned apples, but the flavor and texture will not be as good.
- Don't overmix the batter: Overmixing the batter will make the cake tough. Mix the batter just until the ingredients are combined.
- Bake the cake at a low temperature: Baking the cake at a low temperature will help it to rise evenly and prevent it from becoming dry.
- Use a bundt pan: A bundt pan is the best type of pan to use for this cake. It will give the cake a beautiful shape and allow it to cook evenly.
- Serve the cake warm: This cake is best served warm, with a scoop of vanilla ice cream or whipped cream.
Conclusion:
This moist low-fat apple spice cake is a delicious and healthy treat that is perfect for any occasion. It is easy to make and can be enjoyed by people of all ages.
