MOLASSES BRINED PORK CHOPS
Brining pork chops is like upgrading to premium cable; once you do it, you can't go back to basic. Dissolve salt and molasses in water, toss in the chops, and wait. What do you get from such little effort? A pork chop that's seasoned from the inside out, with a firm, but very moist texture.

MAPLE ROASTED CHICKEN
This sweet, well-seasoned dish is great for Sunday dinner. You only have to marinate for an hour, but you could do it up to overnight. Set it up the night before, then simply roast the chicken just before serving. The sticky glaze adds color, but its sweetness is not overpowering, getting some good balance from the vinegar and the smoky paprika. Pair the roasted chicken with sweet potatoes and brussels sprouts or bitter greens, like collard greens and kale, and use any leftovers in a salad or rice bowl the next day.

Steps:
- Using paper towels, pat the chicken dry and trim off any excess fat. Place in a large resealable plastic bag or medium bowl with a lid.
- In a medium bowl, stir together the maple syrup, apple cider vinegar, garlic powder, onion powder, smoked paprika and 2 tablespoons salt. Pour into the bag with the chicken, seal and refrigerate overnight or for at least 1 hour.
- Heat oven to 400 degrees. Pull the brined chicken out of the fridge, drain off the brine and pat the chicken dry. On a rimmed sheet pan, rub the chicken with the olive oil, 1 teaspoon salt and the pepper.
- Set it skin side up and roast for 25 to 35 minutes, or until the juices run clear when pierced and the internal temperature reaches 165 degrees.
- As the chicken roasts, make the glaze: Add the maple syrup, cinnamon, salt, fennel, paprika and ½ cup water to a small saucepan. Bring to a simmer over medium heat and cook for 10 to 15 minutes, or until the mixture has reduced and thickened enough to coat the back of a wooden spoon.
- Brush the cooked thighs with the glaze and set under the broiler for 30 seconds to 1 minute, keeping an eye on the glaze as it is quick to burn. Serve hot.
Tips:
- Use a whole chicken: This recipe works best with a whole chicken, as it allows the brine to penetrate the meat more evenly. If you are using a chicken that is already cut up, be sure to adjust the amount of brine and cooking time accordingly.
- Brine the chicken for at least 4 hours: The longer you brine the chicken, the more flavor it will absorb. If you are short on time, you can brine the chicken for as little as 2 hours, but for best results, brine it for at least 4 hours or overnight.
- Use a flavorful brine: The brine is what gives the chicken its flavor, so be sure to use a brine that is packed with flavor. The recipe calls for a brine made with molasses, brown sugar, salt, pepper, and bay leaves, but you can also use other flavorful ingredients such as garlic, onion, herbs, or spices.
- Roast the chicken at a high temperature: Roasting the chicken at a high temperature helps to create a crispy skin and juicy meat. Be sure to preheat your oven to the correct temperature before roasting the chicken.
- Use a meat thermometer to ensure that the chicken is cooked through: The best way to ensure that the chicken is cooked through is to use a meat thermometer. Insert the thermometer into the thickest part of the thigh, and cook the chicken until the internal temperature reaches 165 degrees Fahrenheit.
Conclusion:
This molasses brined roasted chicken is a delicious and easy-to-make dish that is perfect for any occasion. The brine infuses the chicken with flavor, and the roasting process creates a crispy skin and juicy meat. Serve the chicken with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.
