OLD FASHIONED MOLASSES CAKE
MANY YEAR AGO SUGAR WAS SCARCE. AFTER COTTON PICKING TIME WAS OVER A FAMILY WOULD USUALLY BUY A 50 LB BAG TO LAST UNTIL SPRING. I WILL NEVER FORGET WHEN I WAS REAL SMALL I KNOCKED A BOTTLE OF TURPENTINE OFF INTO THE OPENED 50 LB BAG OF SUGAR, MY MOTHER DIPPED OFF THE TOP PORTION. BACK THEN IN NORTH CENTRAL ALABAMA FARMERS GREW SUGAR CANE. THEY HAD A SUGAR CANE MILL WHERE THEY PROCESSED THE CANE INTO MOLASSES WITH MULES TIED TO IT AND THEY WOULD GO ROUND AND ROUND TO MAKE THE CANE STRAIN OUT THE MOLASSES. MOLASSES WAS EATEN WITH FRESH BUTTER AND HOT BISCUITS. CAKES WERE MADE WITH MOLASSES INSTEAD OF SUGAR. MY MOTHER MADE MANY MOLASSES CAKES..NOW LET'S WALK DOWN MEMORY LANE.

MOLASSES GINGER CAKE
This easy, dense dark cake packs in a lot of flavor. Molasses, a slightly bitter sweetener, is key, giving the cake just the right character. Chopped dates, raisins and a good dose of black pepper are all in evidence, along with ginger and cinnamon. The end result is so good: If you bet you can stop at one slice, you'll surely lose the wager.

MOLASSES SPICE CAKE
This recipe has been in my personal collection for 30 years. The spice flavors are nicely balanced, and the molasses and coffee make it dark and moist. You can use either instant coffee with 1 cup boiling water or brewed coffee in this sheet cake. -Dawn Lowenstein, Huntingdon Valley, Pennsylvania

Tips:
- Use unsulphured molasses for a milder flavor.
- Cream the butter and sugar together until light and fluffy. This will help to incorporate air into the cake, making it lighter and more tender.
- Gradually add the eggs to the butter and sugar mixture, one at a time, beating well after each addition. This will help to prevent the cake from curdling.
- Sift the flour and baking soda together before adding them to the batter. This will help to ensure that the cake is evenly mixed.
- Bake the cake in a preheated oven. This will help to prevent the cake from sinking in the middle.
- Check the cake for doneness by inserting a toothpick into the center. If the toothpick comes out clean, the cake is done.
