JELLO CRANBERRY SALAD

Jello Cranberry Salad image

There's not a recipe quite like this that I can find on the internet so I'm posting it here for safe keeping. My mom made this for every Thanksgiving and Christmas and now I'm the one that makes it. It can be made in a jello mold of like I do, in a crystal bowl.

Time 50m

Yield 24 serving(s)

Number Of Ingredients 8

1 (6 ounce) package lemon Jell-O gelatin
2 cups boiling water
2 cups pineapple juice
2 (20 ounce) cans crushed pineapple, well drained
2 cups chopped celery
2 cups sugar
1 cup chopped walnuts
1 (16 ounce) bag fresh cranberries

Steps:

  • Either early in the day or the night before drain the pineapple reserving the juice. Squeeze out as much juice as you can to yield at least 2 cups. You will need it in the next step.
  • In a very large bowl, dissolve the jello in the 2 cups boiling water. When thoroughly dissolved add the reserved pineapple juice and stir well. Refrigerate until the soft set stage.
  • Meanwhile grind the cranberries in a food grinder ( I use my KitchenAid with the grinder attachment). Add the ground cranberries and the remaining ingredients to the soft set jello. Mix well, cover and chill until set or pour into your favorite mold and chill until set.

Tips:

  • Use fresh cranberries: Fresh cranberries have a brighter flavor and a better texture than frozen or canned cranberries.
  • Don't overcook the cranberries: Overcooked cranberries will become mushy and lose their flavor.
  • Use a good quality gelatin: A good quality gelatin will help your salad set properly and give it a smooth texture.
  • Chill the salad thoroughly before serving: This will help the salad set properly and make it easier to slice.
  • Garnish the salad with fresh mint or parsley: This will add a pop of color and freshness to the salad.

Conclusion:

Cranberry Jell-O salad is a classic holiday dish that is always a crowd-pleaser. It is easy to make and can be made ahead of time, making it a perfect dish for busy hosts and hostesses. With its bright red color and sweet and tangy flavor, cranberry Jell-O salad is sure to be a hit at your next holiday gathering.
