MOM'S SAUCY PORK CHOPS

Mom's Saucy Pork Chops image

As you can see from the title this was my Mom's recipe. It makes a wonderful sauce that even kids like. We used to scrape the dish to get the last little bit of it on our chops. I always wondered what would happen if you doubled the sauce ingredients and tossed in a little bit of rice. If you try it, please let me know:)

MOM'S TENDER AND JUICY PORK CHOPS

Mom's Tender and Juicy Pork Chops image

Brining the pork chops really makes a difference in this recipe. Once fried, they're tender and flavorful with a thin layer of crust. After they're fried, the pork chops simmer in a simple gravy filled with fresh onions and garlic. This is an easy to throw together dinner that requires very little work and is big in flavor. The gravy does call for a little white wine (which you don't really taste). If you do not drink, replace the wine with a little extra chicken broth. Also, you'll note there is no salt when cooking the pork chops. The brine adds plenty of salt to the meat.

BASIC BRINE
3 cup(s) water
2 cup(s) ice cubes
1/4 cup(s) Kosher salt
1/4 cup(s) sugar
PORK CHOPS
6 - bone-in pork chops
1 - egg, beaten with a little water to make an egg wash
- Italian bread crumbs
- vegetable or canola oil
1/2 large onion, sliced thin
2 clove(s) garlic, minced
1 1/2 cup(s) chicken broth
1/2 cup(s) dry white wine
1/2 teaspoon(s) dried parsely flakes
1/4 teaspoon(s) dried basil
1/4 teaspoon(s) freshly ground black pepper (or to taste)

Steps:

  • Place all brine ingredients in a plastic bowl that has a tight-fitting lid. Stir. Add pork chops. Cover and keep in the fridge for at least 4 hours. (I know this is an extra step but it really makes the pork chops super tender.)
  • Remove pork chops from brine and pat dry with a paper towel.
  • Dip pork chops in egg wash.
  • Then Italian bread crumbs to coat.
  • Heat oil in a large skillet. Just enough to coat the bottom. Fry pork chops in the skillet for approximately 3 minutes per side. They should be a nice golden brown.
  • Then set them aside.
  • Remove oil from skillet leaving approximately one tablespoon. Add the onions to the skillet and saute on medium heat until translucent - about 5 minutes. Add the minced garlic and cook for one more minute - stirring.
  • Add the chicken broth and white wine.
  • Add seasonings to the skillet. Simmer over low heat for about 5 minutes.
  • Put the pork chops back into the skillet with the chicken broth mixture. I place them around the sides of the skillet overlapping slightly to form a circle.
  • Cover and cook over low heat for approximately 20 minutes. Serve over rice or noodles.

Tips:

  • To ensure the pork chops are cooked evenly throughout, use a meat thermometer to measure the internal temperature. The safe internal temperature for pork chops is 145°F (63°C).
  • For a crispy crust on the pork chops, sear them in a hot skillet over medium-high heat before reducing the heat to medium-low and cooking them through.
  • To add flavor and moisture to the pork chops, marinate them in a mixture of olive oil, garlic, herbs, and spices for at least 30 minutes before cooking.
  • Serve the pork chops with a variety of sides, such as mashed potatoes, roasted vegetables, or a fresh salad.
  • If you don't have cornbread mix, you can make your own by combining 1 cup of cornmeal, 1 cup of all-purpose flour, 2 teaspoons of baking powder, 1 teaspoon of sugar, and 1/2 teaspoon of salt.

Conclusion:

Mom's Corny Pork Chops are a delicious and easy-to-make meal that the whole family will enjoy. The pork chops are coated in a flavorful cornbread crust and then baked until they are cooked through. They are served with a creamy corn sauce that is made from scratch. This dish is sure to become a family favorite.
