MOM'S CRANBERRY SALAD

Mom's Cranberry Salad image

This is a favorite recipe at our Thanksgiving table. My mom has made this every year for as long as I can remember. Now I make it for my family. Prep time does not include chilling in the fridge. This makes a beautiful salad. It's also great at Christmas. Put it in a mold before chilling. After plating it, garnish with fresh mint or parsley

Time 30m

Yield 12 serving(s)

Number Of Ingredients 8

1 (12 ounce) package fresh cranberries
2 cups sugar
1 1/2 cups water
1 (6 ounce) package strawberry Jell-O gelatin dessert
25 -30 large marshmallows
2 cups apples (diced)
1 cup celery (diced)
1 cup pecans (chopped)

Steps:

  • Combine water and sugar in pot and bring to a boil.
  • Add cranberries. Cook until cranberries pop open.
  • While mixture is hot, add strawberry Jell-o. Stir until combined.
  • Add marshmallows. Stir until melted.
  • Pour into bowl.
  • Chill just until cool but not set. About 30 minutes. Your next step will be to add the rest of the ingredients. You want your apples, celery and pecans to be combined within the salad. You don't want them to sink to the bottom of the bowl. If the Jell-o mixture is too warm the ingredients will sink.
  • Add apples, celery and pecans. Stir.
  • Pour into mold or bowl. Chill until set.
  • We usually fix this the night before so that it is ready to eat at Thanksgiving lunch.

JELLO CRANBERRY SALAD

Jello Cranberry Salad image

There's not a recipe quite like this that I can find on the internet so I'm posting it here for safe keeping. My mom made this for every Thanksgiving and Christmas and now I'm the one that makes it. It can be made in a jello mold of like I do, in a crystal bowl.

Time 50m

Yield 24 serving(s)

Number Of Ingredients 8

1 (6 ounce) package lemon Jell-O gelatin
2 cups boiling water
2 cups pineapple juice
2 (20 ounce) cans crushed pineapple, well drained
2 cups chopped celery
2 cups sugar
1 cup chopped walnuts
1 (16 ounce) bag fresh cranberries

Steps:

  • Either early in the day or the night before drain the pineapple reserving the juice. Squeeze out as much juice as you can to yield at least 2 cups. You will need it in the next step.
  • In a very large bowl, dissolve the jello in the 2 cups boiling water. When thoroughly dissolved add the reserved pineapple juice and stir well. Refrigerate until the soft set stage.
  • Meanwhile grind the cranberries in a food grinder ( I use my KitchenAid with the grinder attachment). Add the ground cranberries and the remaining ingredients to the soft set jello. Mix well, cover and chill until set or pour into your favorite mold and chill until set.

Tips:

  • Use fresh cranberries: Fresh cranberries have a brighter flavor and a firmer texture than frozen cranberries. If you're using frozen cranberries, thaw them completely before using.
  • Don't overcook the cranberries: Overcooked cranberries will become mushy and lose their flavor. Cook them just until they start to pop.
  • Use a good quality gelatin: A good quality gelatin will help your salad set properly. Look for a gelatin that is made from 100% beef or pork skin.
  • Chill the salad before serving: This will help the salad set properly and develop its flavor.
  • Garnish the salad with fresh cranberries, mint, or whipped cream: This will add a festive touch to your salad.

Conclusion:

Cranberry Jell-O salad is a classic holiday dish that is easy to make and always a crowd-pleaser. With its bright red color and sweet and tart flavor, it's sure to be a hit at your next holiday gathering. So next time you're looking for a festive and delicious dessert, give Cranberry Jell-O salad a try. You won't be disappointed!
