GREEK GREEN BEANS
Thanks to LonghornMoma I'm posting this for all to try. A super easy & yummy way to make green beans. A twist on my Greek spinach. Hope you all enjoy! Can be made ahead. Serves 4 of us (but we like it a lot, lol) more like 6-8. Easily doubled. Time is a guess--start to finish is maybe 20-25 minutes.

Steps:
- Cook your green beans fresh or frozen. If using canned skip this.
- Heat the olive oil in a sauce pan, add the onions.
- Cook until soft about 5 minutes on low.
- Add everything but feta. If using canned green beans add now.
- Simmer on low until hot.
- Add feta.
- I've done this in the oven in a casserole dish, and in a foil packet on the grill. You're basically just heating everything through.

MOM'S GREEK STRING BEANS
My favorite green beans! My Greek mother and grandmother made these with roast lamb since I can remember. It's surprising how just four ingredients can taste so Greek! added my picture where I used a pound of frozen French sliced green beans and diced tomatoes.

Steps:
- Clean the green beans or defrost frozen green beans.
- Heat 1/4 inch oil in a large pan, add onions.
- Cook until onions are just about to brown. Sprinkle with a little cinnamon. (this is how I was taught)
- Add the tomato sauce or diced tomatoes, which I prefer. Bring to a boil.
- Add the green beans and simmer for 20-25 minutes, covered.
Tips:
- For the best flavor, use fresh string beans. If you're using frozen string beans, thaw them completely before cooking.
- Trim the string beans by cutting off the ends. You can also remove the strings from the beans by using a vegetable peeler.
- Blanch the string beans in boiling water for 2-3 minutes, then immediately transfer them to a bowl of ice water to stop the cooking process. This will help the beans retain their bright green color and crisp texture.
- Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes.
- Add the garlic and cook for 1 minute more, or until fragrant.
- Add the string beans, tomatoes, oregano, salt, and pepper to the skillet. Cook, stirring occasionally, until the string beans are tender, about 10 minutes.
- Serve the string beans immediately, or let them cool and store them in the refrigerator for later.
Conclusion:
Greek string beans are a delicious and healthy side dish that can be enjoyed all year long. They're easy to make and can be served with a variety of main courses. Whether you're looking for a quick and easy weeknight meal or a side dish for a special occasion, Greek string beans are a great option.
