PEANUT PATTIES
Peanut patties are like peanut brittle's Southern cousin. This recipe is from one of our favorite cookbooks, Texas Home Cooking, by Cheryl Alters Jamison and Bill Jamison.

Steps:
- Preparation: Lay a large piece of waxed paper on a dishtowel on a counter. In a heavy saucepan, combine the sugar, peanuts, corn syrup and water. Stirring constantly over medium heat, cook the mixture to the high end of the soft ball stage, 235°F. Remove the pan from the heat, and stir in the remaining ingredients, adding enough food coloring to get a vibrant red shade. Stir the mixture frequently for approximately 20 minutes, or until it cools to about 125°F. The mixture will become very thick and creamy opaque, and the peanuts will be suspended. Immediately spoon out the mixture in patties, the larger the better. Let the patties sit for at least 1 hour before eating them. Their texture should be chewy like nougat rather than creamy like praline. Wrap them individually for storage. They'll keep a week.

MOM'S EASY PEANUT BRITTLE
My mom got this recipe years ago from someone she worked with...she made it at Christmas and holidays quite a bit. I have never made it, but I know it tastes yummy!! If you like alot of peanuts to candy ratio, use the whole 1 1/2 cups peanuts (or more if you like)...it's purely personal preference!

Tips:
- Use high-quality chocolate: The quality of the chocolate you use will directly impact the taste of your peanut patties. Look for a chocolate that is rich and flavorful, with a cocoa content of at least 60%.
- Toast the peanuts: Toasting the peanuts before adding them to the peanut butter filling will enhance their flavor and make them more fragrant. You can toast the peanuts in a pan over medium heat or on a baking sheet in the oven at 350°F for 10-12 minutes, stirring occasionally.
- Use creamy peanut butter: Creamy peanut butter will produce a smoother filling than chunky peanut butter. If you only have chunky peanut butter on hand, you can process it in a food processor until it becomes smooth.
- Chill the peanut butter mixture before forming the patties: This will help the mixture to set and make it easier to form into patties. You can chill the mixture for at least 30 minutes, or up to overnight.
- Coat the patties in chocolate: You can use melted chocolate or chocolate chips to coat the peanut patties. If you are using melted chocolate, dip each patty into the chocolate and then place it on a parchment paper-lined baking sheet. If you are using chocolate chips, melt them in a microwave-safe bowl and then pour the melted chocolate over the patties. Sprinkle with chopped peanuts, if desired.
Conclusion:
Peanut patties are a delicious and easy-to-make treat that are perfect for any occasion. With just a few simple ingredients, you can create a batch of peanut patties that are sure to be a hit with everyone who tries them. So next time you are looking for a sweet treat to enjoy, give these peanut patties a try. You won't be disappointed!
