My mom makes this at Christmas time. I'm not a big fan of it but everyone else in the family loves it. It's a simple dish. *BUY the dried salted cod at least 24 hours before needed, you would need to rinse it many times, place in bowl cover with cold water and keep changing the water every 6 hours.

4 lbs salted cod (dried)
3 cups chopped fresh parsley (Bunch of Parsley)
1 cup extra virgin olive oil
2 lemons (just the juice is needed)
10 ounces black olives, cut olives in half
4 ounces Spanish olives, cut olives in half (with pimento)
2 teaspoons hot red pepper flakes
salt, if needed

Steps:

  • Boil the *rinsed cod for around 15 minutes.
  • Let the cod cool.
  • In a large bowl flake the cod.
  • Mix in the chopped Parsley.
  • Add the extra Virgin Olive Oil and Lemon Juice - mix.
  • Add the Black Olives, Spanish Olives, and pepper flakes - mix.
  • Add salt if needed and enjoy.

My mother always made this salad for special holidays or company. She started making this salad in the 50's and our family always enjoyed it. It can be a main course meal in hot weather by adding cooked macaroni,also. Hope you enjoy as much as I do.

can(s) english peas, canned
half c mayo or salad dressing
qtr c chopped onions
3 Tbsp sweet relish
2 chopped boiled eggs
3 slice chopped american cheese
pinch salt/pepper to taste
1 tsp dill seed,mustard seeds,poppy seeds,celery seeds
1 jar(s) small diced pimentos

Steps:

  • 1. Drain canned peas well and put in large bowl. Add all other ingredients and mix well. Add a dash of paparika on top and chill well before serving.

1 small onions, vidalia, chopped
1 small pkg elbow macaroni
1/2 Tbsp celery seed
1/2 c dill or sweet relish
1 1/2 c mayonnaise
2 Tbsp yellow mustard
1/2 tsp salt
1/2 tsp pepper
5 hard boiled eggs

  • 1. Cook macaroni till done and run cold water over it till its cool drain.
  • 2. Chop onion,and hard boiled eggs all but one egg
  • 3. combin all igrediets together in large bowl .SLICE I EGG THIN TO PUT ON TOP .

No matter where I go for a pot luck or a picnic I'm told to bring my Roni Salad. It's my grandmas recipe and everyone that tries it loves it.

1 box pasta (i like the twists) cooked
10 hard boiled eggs
1 1/2 c mayonnaise (might need more later) kraft mayo works best
1 medium onion
1 pepper (any color) or a combination of colors
3T garlic powder
2T celery salt

Steps:

  • 1. Boil pasta and eggs I do this together, just put the eggs in before the pasta. Cool pasta but don't rinse, cool eggs in ice water.
  • 2. While pasta is cooking chop onion and pepper, using several different color peppers makes it pretty.
  • 3. Add onion and pepper to cooled pasta then add garlic powder and celery salt, stir well then add mayo.
  • 4. Chop up 6 eggs and add to pasta. Let sit for an hour or so then taste, you might have to add more mayo and spices to taste.
  • 5. When done slice last egg and arrange on top for decoration. Enjoy!
