MOM'S VEGETARIAN STUFFING
Mom makes great stuffing - if you can get some! It's usually gone before it goes around the table, so I think she should double the recipe... I always get some, because she sets some aside for me (the only vegetarian) before she stuffs the bird. Feel free to add more or less of things, that's how Mom cooks, so this is an estimation based on memory.

Steps:
- Saute the above vegetables in oil and toss with bread, broth, raisins, apples, cranberries, and remaining ingredients. Put in an oven friendly container and cover. Place in oven alongside anything that is cooking at the time (like the turkey - or tofurkey).
- Take out of the oven after 60 minutes. Leave covered until ready to serve.
Tips:
- Use a variety of vegetables to create a flavorful and colorful stuffing. Some popular vegetables include celery, onions, carrots, mushrooms, and bell peppers.
- Add some herbs and spices to the stuffing for extra flavor. Some good options include sage, thyme, rosemary, and garlic powder.
- If you're using bread cubes, make sure they're dry before adding them to the stuffing. This will help prevent the stuffing from becoming soggy.
- Don't overstuff the turkey or chicken. This will make it difficult for the stuffing to cook evenly.
- Bake the stuffing at a high temperature for a short amount of time. This will help create a crispy crust on the outside while keeping the inside moist.
Conclusion:
Vegetarian stuffing is a delicious and versatile dish that can be enjoyed by people of all ages. It's a great way to add some extra vegetables to your diet and it's also a perfect side dish for Thanksgiving or Christmas dinner.
