1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon kosher salt
3 ripe bananas
2 tablespoons milk
¼ teaspoon vanilla extract

1 can (16 ounces) chocolate frosting
24 vanilla wafers
Black and red decorating gel
48 pastel blue and/or green milk chocolate M&M's

Chocolate candy wafers, such as Necco
Chocolate Frosting for Cupcake Decorating
12 ounces fondant, tinted with yellow gel-paste food coloring
2-inch round cutter
7/8-inch round cutter
3-inch flower-shaped cutter
Pastry bag
Small plain round pastry tip

Steps:

  • For ears, make 2 small horizontal slits with a paring knife in opposite sides of 1 cupcake, just above paper liner, and then partially insert a wafer into each slit. Frost cupcake and wafers. Repeat, reserving remaining frosting.
  • Roll fondant to a 1/8-inch thickness. For each cupcake, cut out 1 round at 2 inches and 2 rounds at 7/8 inch; cut a straight edge on each 7/8-inch round. 1 box yellow cake mix
1 1/2 c mashed ripe bananas
2/3 c canola oil
1 c water
3 large eggs
1 - 3 1/2 oz box butterscotch instant pudding, divided - use 3/4 box in cake batter, save rest for frosting
1 tsp coconut emulsion or extract
3/4 c coconut, flaked
2/3 c semi-sweet chocolate chips
2/3 c vanilla or white chocolate chips
FROSTING
2 c heavycream
1/2 c powdered sugar
1/4 box butterscotch instant pudding (about 2 tbl)
i used chocolate covered banana chips for garnish

Steps:

  • 1. Preheat oven to 350 degrees. Line cupcake pans and set aside.
  • 2. Mix bananas, eggs, oil, water, extract, cake mix and 3/4 box of pudding mix together and beat for 2 minutes. Stir in coconut and chips. Scoop into cupcake pans 2/3 full. Bake for about 25 minutes or until they test done. Set aside to cool.
  • 3. Chill mixer bowl and wire whip in fridge. Beat whipping cream and powdered sugar until soft peaks form. Add the remaining pudding mix and continue beating until medius peaks form. Pipe a swirl on top of cupcakes. I topped them with chocolate covered banana chips. Enjoy!
