CARAMEL APPLE MONSTER MUNCH

Caramel Apple Monster Munch image

Make sure to use stove-popped popcorn for this recipe--not the microwave type--to ensure that your munch will be extra crisp and delicious.

Categories     dessert

Time 25m

Yield 10 to 12 servings (8 1/2 cups)

Number Of Ingredients 10

2 tablespoons vegetable oil
1/3 cup popcorn kernels
Nonstick cooking spray, for spraying the bowl and spatula
1 cup salted cocktail peanuts
3/4 cup packed light brown sugar
6 tablespoons (3 ounces) unsalted butter
1/4 cup light corn syrup
3/4 teaspoon kosher salt
1 teaspoon vanilla extract
2 cups lightly crushed red and/or green apple chips

Steps:

  • Heat the oil in a large heavy-bottom pot over medium heat until very hot and shimmering. Add the popcorn and immediately cover with a lid. Shake the pot constantly, holding the lid on with a heatproof holder, until the popping starts, about 1 minute. Reduce the heat to medium and continue to shake the pot until the popping slows to just a few per 5 seconds, 1 to 2 minutes more. Remove from the heat and let stand for another minute to allow any last kernels to pop.
  • Spray a very large bowl with nonstick cooking spray. Put the popcorn in the bowl and remove any unpopped kernels. Add the peanuts. Spray a rubber heatproof spatula with the cooking spray and place next to the bowl.
  • Combine the brown sugar, butter, corn syrup and salt in a medium saucepan and set over medium heat. Cook, stirring, until melted and the edges of the mixture begin to bubble. Clip a candy thermometer to the pan so the bottom of the thermometer is resting in the sugar syrup but not touching the bottom of the pan. Boil, stirring, until the thermometer registers 300 degrees F (the hard-crack stage), about 8 minutes.
  • Turn off the burner and add the vanilla. Stir briefly--about 5 seconds--being careful not to burn yourself as the mixture bubbles up.
  • Immediately pour the caramel evenly over the popcorn and quickly stir with the prepared rubber spatula until the pieces are mostly separated, about 3 minutes. Pull apart any larger clumps, being careful because the caramel will still be hot in spots. Stir in the apple chips.

THE BEST CARAMEL APPLES

The Best Caramel Apples image

When I was searching for a recipe to make homemade caramel apples for the very first time, a close friend gave me this amazing and fairly easy recipe. My family and friends loved these delicious treats! Sprinkle with nuts or whatever you desire while the caramel is still warm (work quickly, the caramel sets VERY fast).

Time 2h

Yield 8

Number Of Ingredients 7

8 large tart apples
8 wooden chopsticks for handles
1 cup butter
2 cups packed brown sugar
1 cup light corn syrup
1 (14 ounce) can sweetened condensed milk
2 teaspoons vanilla extract

Steps:

  • Bring a large saucepan of water to a boil. Dip apples in boiling water for a few seconds, then dry with paper towels to remove any wax from the peels. Set apples aside; when completely cool, insert a wooden chopstick firmly into the bottom of each apple for a handle.
  • Line a baking sheet with parchment paper.
  • Stir butter, brown sugar, corn syrup, and sweetened condensed milk together in a saucepan over medium-high heat. Bring to a boil, stirring constantly, and reduce heat to medium. Cook until a candy thermometer reads 248 degrees F (120 degrees C), 25 to 30 minutes; stir constantly to prevent burning. A teaspoon of the syrup, dropped in a glass of cold water, should form a firm ball. Remove caramel from heat and stir in vanilla extract.
  • Working quickly, dip each apple into the hot caramel to completely coat the apple and about 1/2 inch of the wooden handle. Sprinkle apples with any desired toppings while still hot. Let caramel apples cool on the parchment paper. Use caution, caramel is very hot.

Categories     dessert

Time 20m

Yield 6 servings

Number Of Ingredients 6

3 Granny Smith apples
1/4 cup lemon juice
1 ounce sunflower seeds
6 pieces dried mango
3 tablespoons buttercream frosting
18 candy eyeballs

Steps:

  • Cut each apple in half and core the centers. Cut the top and bottom of each apple off at a slight inward angle so the apple halves stand upright. Cut away wedge-shaped slices from the centers using a paring knife to create a "mouth." Slice the wedges deep enough so a small hole is created in the center of each "V." Brush the exposed apple flesh with lemon juice to prevent browning.
  • Stick the sunflower seeds into the apple's flesh to create "teeth."
  • Insert a mango slice into the hole in the center of each apple to create a tongue. Add small dots of frosting to the backs of the candy eyeballs to secure them just above the mouth.

CARAMEL APPLES

Caramel Apples image

An easy recipe for making homemade caramel apples, this can be doubled or tripled easily to make more. Once dipped, the apples can be rolled in chopped nuts, candy, or drizzled with chocolate for a little extra flair. Be sure to start with room temperature apples as cold apples will cause the caramel mixture to harden too quickly making it difficult to work with.

Categories     snack, candies, dessert

Time 30m

Yield 4 servings

Number Of Ingredients 8

4 medium apples (about 1 1/2 pounds total), such as Granny Smith, McIntosh or Honeycrisp, preferably organic (see note), washed and dried, at room temperature
4 (8-inch) sturdy treat sticks
1 cup/200 grams granulated sugar
1/3 cup/80 milliliters light corn syrup
1/2 teaspoon kosher salt
3/4 cup/180 milliliters heavy cream
1 teaspoon vanilla extract
1 tablespoon unsalted butter

Steps:

  • Line a baking sheet with a silicone baking mat or a piece of lightly greased parchment paper. Place the apples onto the prepared baking sheet, and press a treat stick firmly into the stem end, into the center of each apple.
  • In a medium pot, combine the sugar, corn syrup and 1/3 cup water. Stir the mixture with a silicone spatula or wooden spoon over medium heat until the mixture begins to bubble at the edges. Once it begins to bubble, stop stirring.
  • Cook the mixture (without stirring) until it begins to turn a medium amber color, 10 to 12 minutes. When the desired caramel color is reached, stir in the salt, cream, vanilla and butter - the mixture will bubble up vigorously - stir until it's combined and smooth.
  • Continue to cook the caramel over medium heat, stirring constantly, until the mixture reads 245 degrees on an instant-read thermometer, another 8 to 10 minutes. Leave the syrup mixture in the pot, and allow to cool to 200 degrees. (If the mixture cools too much, it can be reheated until fluid.)
  • Working quickly, dip 3/4 of an apple into the caramel, tilting the pot as needed to coat. Hold the apple over the caramel, letting the excess drip off, then transfer to the baking sheet. Repeat with remaining apples, reheating the caramel as necessary. Cool completely before serving.

Tips:

  • Use Granny Smith apples for the best caramel adhesion and tart flavor.
  • Wash and dry the apples thoroughly before dipping them in caramel to prevent the caramel from slipping off.
  • If the caramel is too thick, add a tablespoon or two of milk or cream and stir until smooth.
  • If the caramel is too thin, add a tablespoon or two of butter and stir until smooth.
  • Dip the apples in the caramel one at a time, using a spoon to coat them evenly.
  • Place the caramel apples on a parchment paper-lined baking sheet and refrigerate for at least 30 minutes before serving.
  • To make chocolate caramel apples, drizzle melted chocolate over the caramel apples before refrigerating.
  • To make peanut butter caramel apples, roll the caramel apples in chopped peanuts before refrigerating.
  • To make toffee caramel apples, sprinkle toffee bits over the caramel apples before refrigerating.

Conclusion:

Caramel apples are a classic fall treat that is easy to make and always a hit with kids and adults alike. With a few simple ingredients and a little bit of time, you can create delicious and festive caramel apples that will be the star of any party or gathering. So next time you're looking for a fun and festive treat, give caramel apples a try!
