1/2 tablespoon kosher salt
1 teaspoons freshly ground black pepper

Steps:

  • Roughly chop the cucumbers, bell peppers, tomatoes, and red onions into 1-inch cubes. Put each vegetable separately into a food processor fitted with a steel blade and pulse until it is coarsely chopped. Do not overprocess!
  • After each vegetable is processed, combine them in a large bowl and add the garlic, tomato juice, vinegar, olive oil, salt, and pepper. Mix well and chill before serving. The longer gazpacho sits, the more the flavors develop.

1 small, minced onion
2 cups freshly diced tomatoes (we used canned this time of year)
1 cup minced green pepper
1 tsp. honey
1 clove crushed garlic
1 diced cucumber
2 scallions. chopped
juice of 1/2 lemon & 1 lime (we used only lemon but lime would be good)
2 Tbs. wine vinegar
1 tsp. each tarragon (we subbed dill) and basil
dash of ground cumin
1/4 cup freshly-chopped parsley
dash of tabasco sauce
2 Tbs. olive oil
salt & black pepper to taste

Steps:

  • Combine all ingredients and chill for at least 2 hours. We chose to puree everything in a blender. Either way, it's refreshing!

a 1/4-pound piece jícama
1 small red bell pepper
1 celery rib
1 small garlic clove
2 cups V8 or tomato juice
2 tablespoons fresh lemon juice, or to taste
1 1/2 teaspoons Worcestershire sauce, or to taste
Garnish: chopped fresh chives

Steps:

  • Cut cucumber in half lengthwise and cut each half lengthwise into 3 spears. Cut spears crosswise into 1/4-inch-thick pieces and transfer to a large bowl. Peel j‭cama and cut enough into 1/4-inch dice to measure 1 cup. Cut bell pepper and celery into 1/4-inch dice and add with diced j‭cama to cucumber. Mince garlic and toss with cucumber mixture. Stir in remaining ingredients and season soup with salt and pepper.
  • In a blender purée half of soup until smooth and return to bowl, stirring to combine. Chill soup, covered, until cold, at least 1 hour, and up to 2 days. Season soup and serve garnished with chives.

1/2 cup diced bell pepper (red or green)
2 tablespoons olive oil
1 1/2 cups bulgur
3 cups vegetable stock or 3 cups water
1/4 cup toasted ground nuts
1/4 cup fresh parsley
1/4 cup chopped fresh basil or 1 tablespoon dried basil
3 tablespoons chopped fresh spearmint or 1 1/2 tablespoons dried spearmint
2 tablespoons chopped fresh lovage or 2 tablespoons celery leaves
1 teaspoon soy sauce
1/4 teaspoon salt
fresh ground black pepper (to taste)
1 cup crumbled feta cheese (optional)

Steps:

  • Preheat oven to 300 degrees.
  • In an ovenproof skillet large enough to contain all the ingredients, saute the onion, carrot, and pepper in the oil.

6 large ripe tomatoes
1 large cucumber
1 medium red onion, coarsely chopped
3 cloves garlic, coarsely chopped
4 tablespoons red wine vinegar, or more to tate
5 tablespoons extra-virgin olive oil, or more to taste
salt and ground black pepper to taste

Steps:

  • Prepare a bowl with ice water.
  • Bring a large pot of water to a boil over high heat. Cut crosses into the bottom of the tomatoes with a sharp knife, and blanch tomatoes in the boiling water for 1 to 2 minutes until the skin begins to come off. Remove tomatoes with a slotted spoon and immediately immerse in the ice water.
  • Remove skin from the tomatoes and cut out the seeds over a bowl (so that no juice is lost); discard the seeds.
  • If the cucumber is organic, leave the peel on; otherwise peel it. Remove seeds of cucumber and roughly chop.
  • Combine tomatoes, cucumber, onion, garlic, and red wine vinegar in a food processor or blender; blend until gazpacho has desired consistency, either coarsely chopped or finely pureed. Slowly add olive oil and season with salt and pepper. Puree again briefly.

I know there are several samosa recipes out there, but our family just loves these. They are totally worth the time it takes to make them. From The Moosewood Cookbook. Number of servings is approximate - it's plenty for 4 or 5 people. Note: I find I often have more filling than pastry, but I have also found that the filling freezes fine if you want to save it for another batch - or you can just mix up some more dough and eat it all! I've used leftover piecrust in a pinch and just thrown them in the oven to brown rather than frying and they came out just fine.

2 large potatoes, cooked and mashed
1 cup finely minced onion
2 medium garlic cloves, crushed
1/2 teaspoon grated fresh gingerroot
1/2 teaspoon mustard seeds (I use dry mustard)

1/2 cup diced carrot, cooked till just tender
1/2 cup cooked green peas
cayenne pepper
1 teaspoon salt
1/2 lemon, juice of
2 -3 tablespoons butter
2 cups flour
1 teaspoon salt
4 tablespoons melted butter
1/3 cup yogurt
water

  • Heat butter in heavy skillet.
  • Add garlic, ginger, onion, salt and mustard seeds.
  • Saute 6-8 minutes, or till onion is soft and clear.
