With all the layers of yumminess, any family would love to wake up to this breakfast casserole on Christmas morning. We used the frozen shredded potatoes and it was quite delicious. 3/4 c shredded onion
16 oz cottage cheese
12 oz mild cheddar cheese
9 large eggs

  • 5. In a mixing bowl, combine cottage cheese, shredded cheese, eggs, sausage/mushroom/onion mixture, salt, pepper and garlic salt. Mix well.
  • 6. Once mixed, pour onto prepared shredded potatoes.

BONNIE'S CHRISTMAS MORNING CASSEROLE

BONNIE'S CHRISTMAS MORNING CASSEROLE image

The thing I like the best about this breakfast casserole is that it is made the night before Christmas, and it sits in the fridge and blends all the great flavors together. The next morning, you pop it in the oven, and when the aroma wafts through the house, then you know that Christmas has finally arrived. This is our Christmas...

Time 55m

Number Of Ingredients 6

12 slices of cubed bread (i use texas toast bread)
1/2 pound of medium sharp shredded cheese
8 eggs
2 cups of milk
2 cups of ground ham, shrimp, crabmeat, mushrooms or crumbled bacon.
1/2 stick of butter, melted

Steps:

  • 1. THE NIGHT BEFORE CHRISTMAS: Use Pam spray and grease a 9X13 baking dish.
  • 2. Prepare the bread. I use frozen Texas toast bread. (easier to cube frozen, thaw slightly) You can use French bread if Texas toast is not available. Remove the crusts from the bread, cut into 1/2 inch cubes, and place the cubes in the baking dish.
  • 3. Top with the cheese. Beat the eggs and add to the milk and pour over the bread and cheese. Top with cooked ground ham, cooked sausage, shrimp, crabmeat, mushrooms or crumbled bacon, whatever you desire. (I've tried them all, and they are all yummy!) Pour the melted butter over all. Cover with saran wrap and refrigerate overnight.
  • 4. CHRISTMAS MORNING: Remove the casserole from the fridge, and heat it up slowly so your cold dish doesn't break. I let mine sit on the counter for about an hour and put it in the oven when I put it on pre-heat. Bake at 350 degrees for 35 minutes to 45, depending on the heat of your oven and the altitude. High altitude may take almost an hour to bake. Check periodically with toothpick. When your casserole is done, cover loosely with foil and let rest for 10 minutes so when you cut it, it will come out of the dish in a square.
  • 5. Cook's Tip: My original recipe called for a whole stick of butter, but I found that 1/2 stick works just fine for us. This is a good recipe for you to make your own. If you have some favorite ingredients that you would like to see added for Christmas morning, have at it! Enjoy!

GOOD MORNING GOODNESS CASSEROLE

Good Morning Goodness Casserole image

Recently, we had a group over to work on a yard project. I knew my Saturday morning kitchen time was limited that work day, so I prepped this the Friday afternoon before. First thing Saturday morning, the oven went on and an hour later, we had this hearty, scrumptious breakfast.

Provided by Susan Sodon

Categories     Eggs

Time 1h20m

Number Of Ingredients 14

8 slice frozen hash brown patties
4 c shredded sharp cheddar cheese
1 lb fully cooked ham
1/2 red pepper, diced
4 green onions (scallions), diced
1 shallot, diced
7 eggs
1 c milk (2% works too)
2 Tbsp canola or vegetable oil
1/2 tsp salt
pepper to taste
1/2 tsp ground mustard
8-10 sprig(s) fresh chives, chopped
1/2 c sour cream

Steps:

  • 1. Dice the red pepper, green onions (use both the white and the green of the onion) and shallot. Heat up a saute pan. When your pan is hot, add 2 tbls of canola or vegetable oil - however, do not let the oil smoke or burn. Saute the red pepper, green onions and shallot for 5 - 10 minutes on medium heat to soften and gently carmalize - carmalizing brings out the great flavors. Remove from heat.
  • 2. Arrange the 8 frozen hash brown patties in a single layer in a greased 13-in. x 9-in. x 2-in. baking dish. Sprinkle 2 cups of the cheese, the ham and red pepper/green onion/shallot mixture over the hash brown patties.
  • 3. In a bowl, beat eggs, milk, salt, pepper and mustard, then pour over the cheese, ham and red pepper/green onion/shallot mixture. Sprinkle the other 2 cups of cheese over the egg/milk mixture.
  • 4. Bake at 350 degrees for 1 hour. Edges should be golden brown and a knife inserted near the center comes out clean.
  • 5. Place 1 tablespoon of sour cream on a plated portion, sprinkle with the chopped chives and serve.

SUNDAY MORNING BREAKFAST CASSEROLE RECIPE - (4.5/5)

Sunday Morning Breakfast Casserole Recipe - (4.5/5) image

Provided by á-25138

Number Of Ingredients 9

2 slices white bread (I used leftover french bread from dinner the night before. If there is any way you can do this I highly recommend it!)
1 pound breakfast sausage
1 1/2 cups thinly sliced cooked, unpeeled red potatoes
1 1/2 cups mixed cheddar & Monterey Jack cheese, shredded
6 large eggs, lightly beaten
2 cups whole milk
1 teaspoon mustard powder
1/2 teaspoon salt
Black pepper, to taste

Steps:

  • Grease a 2.5-3 quart baking dish (attractive enough to bring to the table) with butter, oil, or cooking spray. Cube the bread and place in the dish in a single even layer. In a large skillet, cook the sausage, breaking it up with a spoon, until it's almost cooked through, about 5 minutes. Drain off the fat. Layer the sausage over the bread, and top with potatoes. Sprinkle the cheese on top. In a medium bowl, whisk together the eggs, milk, mustard powder, salt, and black pepper to taste. Pour the egg mixture over the sausage and potatoes in the casserole. Cover with plastic wrap and refrigerate overnight. When ready to cook the casserole, preheat the oven to 350 degrees fahrenheit. Bake the casserole until set and golden about 30 minutes. Serve hot.

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and avoid any scrambling.
  • Use Fresh Ingredients: Whenever possible, use fresh ingredients for the best flavor and texture.
  • Don't Overcook Your Eggs: Eggs are a delicate ingredient, so be careful not to overcook them. Overcooked eggs can become tough and rubbery.
  • Season to Taste: Always season your food to taste. This means adding salt, pepper, and other spices until the food reaches your desired flavor.
  • Don't Be Afraid to Experiment: Feel free to experiment with different ingredients and flavors to create your own unique morning casserole recipes.

Conclusion:

Morning casseroles are a delicious and versatile breakfast option that can be enjoyed by people of all ages. They are easy to make, can be tailored to your own dietary preferences, and can be made ahead of time, making them a great option for busy weekday mornings.
