CHRISTMAS MORNING EGG CASSEROLE
This was the casserole my mom made every year for Christmas morning.

- Spray a 9x13-inch casserole dish with cooking spray.
- Spread ham into the bottom of prepared casserole dish. Butter one side of each bread slice; cut slices into cubes. Arrange buttered bread cubes atop ham; layer American cheese over bread cubes.
- Whisk milk, eggs, mustard powder, and salt together in a bowl; pour over American cheese layer. Cover dish with aluminum foil and refrigerate 8 hours or overnight.
- Preheat oven to 350 degrees F (175 degrees C). Remove aluminum foil from casserole.
- Bake in the preheated oven until cheese is melted and eggs are set in the middle, about 1 hour.

I had this some time ago and hadn't had it in years. I came across it in my cookbook and thought I would post it here. My SIL's aunt made this for her baby shower and it was absolutely delicious. - Preheat oven to 375 degrees.
- Cube the bread and mix that with the cubed cream cheese.
- Layer half of this into a 13x9 inch baking dish or 2 quart casserole dish.

- Add remaining bread and cheese and pour remaining egg mixture over the top.

- Heat oven to 375°F. Brown the sausage in a saute pan over medium heat for 3 minutes, breaking it into bite size pieces. Add the mushrooms, bell peppers, 1 tsp salt and pepper. Cook an additional 5 minutes. Let cool. Drain.
- In a bowl, beat the eggs and milk. Add remaining salt and cheese; stir to combine.
- Add the bread cubes and cooled sausage mixture to a greased 13×9-inch baking dish. Toss to combine.

- 1. Preheat oven to 375.
- 2. In a large skillet, saute pork sausage, onions and mushrooms. Cook on medium high until sausage is no longer pink. Sausage should be crumbled. Drain and set aside.
- 3. I shred my own potatoes, but frozen shredded potatoes will work fine also. If shredding your own potatoes, make sure to drain and press out as much moisture as possible.
- 4. In a 13x9 glass baking dish, add shredded potatoes and 1/4 stick of melted butter, mix potatoes and butter until completely coated. Using a spatula, spread mixture evenly onto bottom of baking dish.
- 5. In a mixing bowl, combine cottage cheese, shredded cheese, eggs, sausage/mushroom/onion mixture, salt, pepper and garlic salt. Mix well.
- 6. Once mixed, pour onto prepared shredded potatoes.
- 7. Bake at 375 degrees, uncovered, for 60 minutes.

- 1. THE NIGHT BEFORE CHRISTMAS: Use Pam spray and grease a 9X13 baking dish.
- 2. Prepare the bread. I use frozen Texas toast bread. (easier to cube frozen, thaw slightly) You can use French bread if Texas toast is not available. Remove the crusts from the bread, cut into 1/2 inch cubes, and place the cubes in the baking dish.
- 3. Top with the cheese. Beat the eggs and add to the milk and pour over the bread and cheese. Top with cooked ground ham, cooked sausage, shrimp, crabmeat, mushrooms or crumbled bacon, whatever you desire. (I've tried them all, and they are all yummy!) Pour the melted butter over all. Cover with saran wrap and refrigerate overnight.
- 4. CHRISTMAS MORNING: Remove the casserole from the fridge, and heat it up slowly so your cold dish doesn't break. I let mine sit on the counter for about an hour and put it in the oven when I put it on pre-heat. Bake at 350 degrees for 35 minutes to 45, depending on the heat of your oven and the altitude. High altitude may take almost an hour to bake. Check periodically with toothpick. When your casserole is done, cover loosely with foil and let rest for 10 minutes so when you cut it, it will come out of the dish in a square.
- 5. Cook's Tip: My original recipe called for a whole stick of butter, but I found that 1/2 stick works just fine for us. This is a good recipe for you to make your own. If you have some favorite ingredients that you would like to see added for Christmas morning, have at it! Enjoy!

- Trim crusts off the bread and cut into cubes.
- Cut cream cheese into i/2 inch cubes.
- Spray a 13x9 inch baking pan with non stick baking spray.
- Arrange 1/2 of bread cubes in the bottom of the pan.
- Top with 1/2 of the cream cheese cubes, mixing the layers somewhat (you do not want smooth layers).
- Mix all berries together and pour on top.

- This can be frozen as is or baked at 350 degrees for 30 minutes and then frozen. Be sure to wrap and label before freezing.

- from baked: cover with oven proof lid and bake at 375 degrees for 30-45 minutes or until completely warmed through.
- Serve with your favourite syrup.
ELISAS HOLIDAY MORNING FRENCH TOAST CASSEROLE

- Combine brown sugar, butter and 1 teaspoon cinnamon in a 13x9-inch baking dish. Add apples and cranberries; toss to coat well. Spread apple mixture evenly over bottom of baking dish. Arrange slices of bread on top. Mix eggs, milk, vanilla and remaining 2 teaspoons cinnamon until well blended. Pour mixture over bread, soaking bread completely. Cover and refrigerate 4-24 hours. Bake, covered with aluminum foil, in a preheated 375 degree oven for 40 minutes. Uncover and bake 5 minutes. Remove from oven; let stand 5 minutes. Serve warm.

- 1. Dice the red pepper, green onions (use both the white and the green of the onion) and shallot. Heat up a saute pan. When your pan is hot, add 2 tbls of canola or vegetable oil - however, do not let the oil smoke or burn. Saute the red pepper, green onions and shallot for 5 - 10 minutes on medium heat to soften and gently carmalize - carmalizing brings out the great flavors. Remove from heat.
- 2. Arrange the 8 frozen hash brown patties in a single layer in a greased 13-in. x 9-in. x 2-in. baking dish. Sprinkle 2 cups of the cheese, the ham and red pepper/green onion/shallot mixture over the hash brown patties.
- 3. In a bowl, beat eggs, milk, salt, pepper and mustard, then pour over the cheese, ham and red pepper/green onion/shallot mixture. Sprinkle the other 2 cups of cheese over the egg/milk mixture.
