1 tablespoon minced garlic

1/4 cup chopped, fresh mint
1/4 cup chopped cilantro

  • 1. Make a paste with the spices, garlic and lemon juice. Add the olive oil and rub this marinade on chicken thighs. Cover and refrigerate overnight. 2. To serve, preheat the broiler or make a charcoal fire. Broil or grill the chicken for 5 minutes on each side. (As these have no skin, pay attention while broiling not to ruin the chicken by letting it char and become hard.) Serve with couscous. Sprinkle with chopped mint and cilantro.

Time 25m

Number Of Ingredients 11

1 lb chicken breast fillet
3 Tbsp spanish olive oil (plus extra for oiling)
1 lemon, juiced
2 garlic cloves, crushed
1 1/2 tsp ground cumin
1 tsp ground coriander
1 tsp hot smoked paprika (or your choice)
1/4 tsp ground cinnamon
1/2 tsp dried oregano
salt
fresh parsley, chopped (for garnish)

Steps:

  • 1. Cut the chicken into 1-inch cubes and place in a large, shallow, nonmetallic dish. Put all the remaining ingredients, except parsley, in a bowl and whisk together. Pour the marinade over the chicken cubes and toss the meat in the marinade until well coated. Cover and let marinate in the refrigerator for 8 hours or overnight, turning the chicken 2-3 times if possible.
  • 2. If using wooden skewers, soak the skewers in cold water for about 30 minutes to prevent burning and to keep food from sticking. If using metal skewers, lightly brush with oil. Preheat the broiler or grill pan. Remove the chicken pieces from the marinade, reserving the remaining marinade and thread an equal quantity onto each prepared skewer leaving a little space between each piece.
  • 3. Brush the broiler rack or grill pan with a little oil. Add the kabobs and cook, turning frequently and brushing with the reserved marinade halfway through cooking, for 15 minutes or until browned on all sides, tender, and cooked through. Serve hot, sprinkled with chopped parsley to garnish.

Tips:

  • For tender and juicy chicken, marinate it in a mixture of olive oil, lemon juice, garlic, cumin, paprika, and salt for at least 30 minutes before grilling.
  • Soak wooden skewers in water for at least 30 minutes before using to prevent them from burning on the grill.
  • Thread the chicken onto the skewers in a zigzag pattern to ensure even cooking.
  • Brush the chicken kabobs with melted butter or olive oil before grilling to help them brown evenly.
  • Grill the chicken kabobs over medium heat for 10-12 minutes, turning them occasionally, until cooked through.
  • Serve the chicken kabobs hot with your favorite dipping sauce, such as tzatziki sauce or hummus.

Conclusion:

Moroccan chicken kabobs are a delicious and easy-to-make dish that is perfect for a summer cookout or party. With their bold flavors and juicy chicken, these kabobs are sure to be a hit with everyone. So next time you're looking for a flavorful and healthy meal, give Moroccan chicken kabobs a try.
