Carrot and Raisin Salad---Moroccan Style image

A little different combination of flavors makes this so good. We like it any time, but is especially good in the winter, when other fresh vegetables are not as good or quite expensive!

Categories     Moroccan

Time 30m

Yield 3 cups

Number Of Ingredients 12

1 lb baby carrots
2 tablespoons lemon juice
1 teaspoon sugar
1/2 teaspoon paprika
1/4 teaspoon ground cumin
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1 tablespoon olive oil
1/4 cup minced fresh parsley leaves
1 cup raisins
1 leaf lettuce (optional)

Steps:

  • Slice carrots into about three pieces.
  • Cook carrots in boiling water until crisp-tender, about five minutes.
  • Drain, rinse with cold water and drain again.
  • While carrots cool, in medium bowl, combine lemon juice, sugar, paprika, cumin, cinnamon, salt and cayenne pepper.
  • Stir to dissolve sugar and salt.
  • Stir in olive oil, parsley and raisins.
  • Add carrots and toss to combine.
  • Cover and chill for at least one hour to blend flavors, stirring occasionally.
  • Serve on a leaf of lettuce, if desired.

Tips:

  • Choose the right carrots: Look for firm, brightly colored carrots with no blemishes. Fresh, tender carrots are best for this salad.
  • Use a sharp grater: A sharp grater will create thin, even shreds of carrot that will absorb the dressing better.
  • Don't overcook the carrots: The carrots should be slightly crunchy, not mushy. Cook them for just a few minutes, until they are tender-crisp.
  • Use a flavorful dressing: The dressing is what really makes this salad shine. Be sure to use a dressing that is flavorful and tangy, such as the one in this recipe.
  • Chill the salad before serving: Chilling the salad allows the flavors to meld and also makes it more refreshing.

Conclusion:

Moroccan Carrot Salad is a delicious and refreshing side dish that is perfect for any occasion. It is easy to make and can be customized to your liking. With its vibrant colors and bold flavors, this salad is sure to be a hit at your next gathering.
