MORTON'S BLUE CHEESE DRESSING
From the legendary Morton's Steak House. Simply amazing Blue Cheese Dressing. As much as I love to lighten things, this just isn't the same using light ingredients. This calls for Durkee's Famous Sauce, if you can't locate Durkee's, I have another recipe for a similar sauce called Mustard-Mayonnaise Sauce. Cook time includes overnight chilling.

Steps:
- To prepare vinaigrette: In a medium mixing bowl, combine the vinegar and 1/3 cup cup of water.
- Whisk the mustard and salad dressing mix until well mixed.
- Add the olive oil and whisk until the dressing is emulsified.
- Let the dressing rest for a few minutes before using so that the flavors can blend. Refrigerate in a tightly-lidded glass or rigid plastic container for up to 7 days and whisk before using.
- Note: If you use Good Seasons brand mix, two packets work well.
- To prepare salad: Cut the iceberg and romaine lettuces into ½-inch squares. Transfer to a large mixing bowl.
- Cut the artichoke hearts into eighths and the hearts of palm into 1/4-inch-long pieces and add to the lettuce.
- Peel the avocado and remove the pit. Cut the avocado into ½-inch cubes and add to the lettuce.
- Crumble the blue cheese over the salad. Sprinkle the bacon bits, chopped egg, onion, and tomato over the salad.
- Add the vinaigrette, toss well, and serve.
- Note: To hard-cook eggs, put them in a saucepan with cold water to cover. Bring to a boil over medium-high heat. Cover, remove from the heat, and set aside for 15 minutes, during which time the eggs will harden. This is a better method than cooking the eggs in boiling water. There is less chance of the eggs cracking.
Tips:
- Use high-quality ingredients: Fresh, flavorful ingredients will make your dressing taste its best. Look for ripe blue cheese, tangy buttermilk, and fresh herbs.
- Let the dressing rest before serving: This will allow the flavors to meld and mellow. You can make the dressing up to 3 days in advance.
- Adjust the seasonings to your taste: If you like a more tangy dressing, add more lemon juice or vinegar. If you like a more garlicky dressing, add more garlic powder.
- Serve the dressing with a variety of foods: Blue cheese dressing is great on salads, burgers, chicken, and fish. It can also be used as a dip for vegetables or crackers.
- Store the dressing in the refrigerator for up to 2 weeks: Be sure to keep the dressing in a tightly sealed container.
Conclusion:
Blue cheese dressing is a versatile and delicious condiment that can be used in a variety of ways. It is easy to make and can be tailored to your own taste preferences. Whether you are looking for a tangy dressing for your salad or a creamy dip for your vegetables, blue cheese dressing is a great option. So next time you are in the kitchen, give this recipe a try. You won't be disappointed!
