OUR FAVORITE MOST AMAZING GUACAMOLE
My husband and I tried a ridiculous amount of guacamole over our decades together, but no recipe ever hit home for us. After much experimenting, I finally created a recipe we can't get enough of. It even beats every restaurant we've ever been to. The two of us can eat this whole bowl in one sitting, and enjoy every bite. I'm so happy to share it with you. Now Taco Tuesday can be any night of the week! Serve it with tortilla chips, or use it to top tacos, quesadillas, fajitas, burritos, and more.

REALLY GOOD GUACAMOLE
Guacamolé is so much better if it's homemade. A few months ago, some co-workers wanted to have a group lunch in the office, and I was asked to contribute something to munch on. My first choice was a bust because I couldn't find all the ingredients, so in a pinch I thought of guacamolé. I figured it'd be something most everyone would like. Except I've never really liked it. I scoured the internet and wound up combining a few different versions and here is what I came up with. I like how there's much more than just avocado going on in it.

Steps:
- Open each avocado by running a knife around the long end until the blade hits the seed. Twist the halves and pull apart. Insert the knife blade firmly into the seed and twist to pull out.
- Scoop out the avocado flesh and place in a medium bowl.
- Gently mash together the garlic cloves and the salt with the side of a knife until it forms a paste. Add this to the avocado.
- Add the lime juice.
- Gently fold in the tomatoes, onion, jalapeño, cilantro leaves, and hot sauce.
- Refrigerate until using. Serve with tortilla chips.
Tips:
- Choose ripe avocados: Look for avocados that are dark green or black in color, with a slight give when gently squeezed.
- Use fresh lime juice: Fresh lime juice will give your guacamole a brighter, more vibrant flavor than bottled lime juice.
- Don't over-mash the avocados: You want your guacamole to have a slightly chunky texture, so don't over-mash the avocados.
- Add your favorite seasonings: Feel free to add your favorite seasonings to your guacamole, such as cilantro, jalapeño, onion, or garlic.
- Serve immediately: Guacamole is best served immediately after it is made, as it will start to brown after a few hours.
