1/2 cup unsalted butter, at room temp
3/4 cup sugar
2 large eggs, at room temp
1/4 cup Mountain Dew soda
2 tablespoons Mountain Dew soda
2 tablespoons frozen orange juice concentrate, thawed
1/2 lemon, zest of
1/2 lime, zest of
1 1/4 cups tbsps all-purpose flour
2 tablespoons all-purpose flour
3/4 teaspoon baking powder
1/8 teaspoon salt
1 cup Mountain Dew soda
1/2 cup unsalted butter, at room temp
2 cups confectioners' sugar
2 tablespoons heavy cream
2 teaspoons frozen orange juice concentrate, thawed
1/2 lemon, zest of
1/2 lime, zest of
food coloring (optional)

Steps:

  • For the cupcakes:
  • Preheat oven to 325°F Line a 12-cup muffin pan with paper or foil liners.
  • In a medium bowl, sift together flour, baking powder, and salt. In a measuring cup, combine Mt. Dew and concentrated orange juice.
  • Combine butter, sugar, and zest in a large bowl. With a hand mixer on medium-high speed, beat until fluffy. Add eggs one at a time, mixing well after each. Scrape the sides of the bowl before adding flour.
  • Add dry mixture in 3 additions, alternating with the wet in 2 additions, beating on low speed until just combined.
  • Pour batter into cupcake papers about 2/3 full. Bake for 16-18 minutes, or until a toothpick inserted in the center comes out clean. Cool on wire racks.
  • For the frosting:.
  • In a saucepan, bring 1 cup of Mt. Dew to a boil over medium-high heat. Reduce heat until it no longer bubbles.
  • Let Mt. Dew evaporate for about 15 minutes. It should reduce by 3/4. You should end up with between 2 tablespoons and 1/4 cup of syrup. Pour it in a small glass measuring cup to cool.
  • Sift the confectioners' sugar into a mixing bowl. Add butter and beat, gradually increasing speed to high, until combined. Pour in heavy cream and Mt. Dew syrup. Continue mixing on high until fluffy. Add OJ concentrate, zest (and food coloring if you like). Mix on low speed until combined.

1 (18 ounce) box lemon cake mix
1 (3 1/2 ounce) box lemon pudding mix
4 eggs
1 1/4 cups Mountain Dew soda
1/2 cup vegetable oil
3 -5 drops yellow food coloring
4 cups confectioners' sugar
1 cup salted butter (room temp)
1/8 cup Mountain Dew soda
1/2 tablespoon lemon juice
1/2 tablespoon lime juice
3 -5 drops neon green food coloring

Steps:

  • Mix cake mix, pudding and eggs well.
  • Add in your oil to the batter and mix for 2 minutes.
  • Slowly pour in your mountain dew soda and mix for another minute.
  • Add to cupcake liners and bake at 350 degrees F for 13-17 minutes (or until toothpick inserted comes out clean).
  • Allow time to cool before frosting.
  • To make frosting, beat your butter well till smooth, slowly add in 1 cup at a time of confectioners sugar and your lemon juice & mountain dew.
  • Add all of your sugar and check for thickness of the frosting. If it is too thick add a teaspoon at a time of mountain dew till you reach the correct consistency to pipe or frost your cupcakes.

Cake:
Duncan Hines Yellow Cake Mix
12 oz Mountain Dew
1/4 - 1/2 cup Mountain Dew for brushing on tops
Frosting:
2 sticks butter, softened
2/3 cup Mountain Dew
1/4 tsp vanilla extract
1/4 tsp lemon extract
7 cups powdered sugar

Steps:

  • Preheat oven to 350. Line 12 muffin cups with liners. Combine cake mix and Mountain Dew in the bowl of an electric mixer and mix on low speed for 30 seconds. Scrape the sides of the bowl and beat on medium for 2 minutes. Fill cups 2/3 full and bake about 15 minutes or until tops spring back when lightly touched. Remove pans from oven and poke holes in warm cupcakes with toothpicks. Brush lightly with Mountain Dew. Remove cupcakes from pan and allow to cool on rack. In the bowl of an electric mixer, the combine softened butter, Mountain Dew, and extracts. Beat on medium low speed until well blended. Add powdered sugar and beat on low speed until combined. Increase speed to medium high and beat for about 2 minutes. If frosting is not thick enough, add powdered sugar until you reach desired consistency. Using gel food coloring, color half the frosting yellow and half green. Place in a piping bag side by side and pipe onto cooled cupcakes.
