4 slices lean bacon
2 medium onions, chopped
2 medium green bell- bell peppers, seeded and chopped
2 cups cooked long-grain rice
1 (16 ounce) can stewed tomatoes, juices included
1 cup tomato juice
salt and pepper
Tabasco sauce, to your taste

Steps:

  • Preheat oven to 325 degrees f.
  • in a large skillet, fry the bacon over moderate heat till almost crisp and drain on paper towels, reserving grease in the skillet.
  • crumble bacon, add the onions and bell peppers to the skillet and cook, stirring, till slightly brown, about 10 minutes.
  • add the rice, tomatoes, plus the their juices, and tomatoe juice, salt and pepper, and tabasco sauce and cook,stirring,5 minutes longer.

1/4 pound salt pork, finely diced
1 small red pepper, diced
1 small green pepper, diced
1 rib celery, diced
1 medium onion, diced
2 cloves garlic, minced
2 cups long-grain white rice
2 cups crushed, canned whole tomatoes, undrained
2 tablespoons tomato paste
1 1/2 cups water
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper

Steps:

  • Heat a large heavy-bottomed saucepan and cook the salt pork over medium-high heat until crisp. Add the red and green peppers, celery, onion, and garlic and cook 3 to 4 minutes.
