- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium-high heat, cook ground beef until no longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans, and heat through.
- Spray a 9x13 baking dish with cooking spray. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips. Spread sour cream over beef, and sprinkle olives, green onion, and tomato over the sour cream. Top with Cheddar cheese.
- Bake in preheated oven for 30 minutes, or until hot and bubbly.

- Heat a large nonstick skillet over medium-high heat. Add ground beef and onion to the hot skillet; cook and stir until browned and crumbly, 5 to 7 minutes. Reduce heat to low and stir in diced tomatoes, black beans, picante sauce, and taco seasoning. Simmer until most of the liquid has evaporated, about 20 minutes.
- Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Spread flour tortillas in the prepared baking dish, overlapping to cover the bottom and sides. Spread beef mixture over tortillas, and sprinkle with 3/4 cup Monterey Jack cheese, 3/4 cup pepper Jack cheese, and 1 1/2 cups crushed tortilla chips. Cover with aluminum foil.

- Preheat the oven to 375F.
- Cook the ground beef in a large skillet until browned; drain off the excess fat.
- Season the meat with the salt and pepper; set aside.
- Mix together the cheese, sour cream, mayonnaise and onion; set this mixture aside.
- Stir the biscuit mix and water together until a soft dough forms.
- With floured fingers, pat the dough into the bottom of a greased 13 X 9 X 2-inch baking pan, pressing the dough about 1/2-inch up the sides of the pan.
- Layer the browned ground beef, tomato slices, green pepper, and sliced olives over the dough layer.
- Spoon the sour cream and cheese mixture over the top.
- Bake, uncovered, until the edges of the dough are light brown, 25 to 30 minutes.
- Cool 5 minutes and then cut into squares to serve.

- Preheat oven to 375 degrees F. Melt butter in 10 inch skillet. Add rice, stir often until golden brown and fragrant. Add seasoning from rice, green chiles, onion and tomatoes. Substitute broth/stock for water that rice calls for. Bring to boil stirring often. Reduce heat to simmer, cover, and cook according to directions on box until tender.
- Meanwhile brown ground beef and drain. Add onion powder, garlic powder, ground cumin, and black beans. Add meat to the rice mixture stirring gently so beans hold their shape.
- Spray 13x9x2 pan with Pam. Add 1/2 of rice mixture. Sprinkle half of shredded cheese over casserole. Add remaining rice mixture. Sprinkle remaining shredded cheese and olives on top.
- Bake for 15-20 minutes or until cheese is bubbly. Serve with hot flour tortillas, and salsa if desired.

This casserole is one of my favorite potluck contributions, as it's easy to make lots of it fast, and folks love it.

Steps:
- Equipment: 2 deep lasagne pans.
- On the bottom of each pan, spread a layer or two of chips, flattening as needed.
- I used about 5 oz of the chips in each pan.
- Drop spoonfuls of refried beans atop the chips layer, using 16 oz in each pan.
- Once you've got all of the spoonful drops down, use the back of the spoon to spread the refried beans around more evenly.
- Pour 8 oz salsa over each pan, and spread about.
- Over each pan, crumble 2.5 oz of chips.
- Layer 7.5 oz of the corn in each pan.
- Chop up the bell peppers, and layer them evenly in the 2 pans.
- Chop up the avocadoes and olives, and layer them evenly in the pans.
- Chop up the cilantro, and sprinkle it over the pans.
- Using the remaining refried beans, drop spoonfuls atop the pans, and spread them around.
- (They won't cover the whole surface; that's ok).
- Spread the remaining salsa in a thin layer across the top of each pan.
- Chop the cherry tomatoes, and sprinkle those over the top of each pan.
- Crumble the rest of the chips, and sprinkle those over the top.
- Bake at 450 degrees for about 1/2 hour, maybe more (keep an eye on it after the first 20 minutes as ovens can vary); I turn the oven off once the top layer of chips is lightly browned and a forkful swiped out of the bottom of the pan is hot.
- (Note- Don't worry too much about the quantities of ingredients; this is not a recipe where precision matters. If you have more or less of something, it'll still taste good).

- Note: Brown ground hamburger meat in a big pot with your onions and jalapeno peppers and mushrooms. Drain off grease.
