PATTY PAN FRITTATA
I had a beautiful patty pan squash sitting on my counter and was wondering what to do with it that was new and yummy for my family. I hadn't made breakfast yet so a summer squash frittata seemed in order! Similar to zucchini, patty pan squash leant itself well to my basic frittata recipe. Serve with your favorite brunch sides or on their own. You can also chill and serve cold within 24 hours.

Steps:
- Preheat oven to 375°. Spray a 12-cup muffin tin with cooking spray and set aside.
- Meanwhile, brown sausage in a large skillet over medium heat until golden, breaking up the meat with a wooden spoon. Drain meat on paper towels.
- In a large bowl, whisk eggs, milk, cheeses, salt and pepper.
- Divide egg mixture between the muffin tins. Top each serving with roasted red peppers, sausage, and basil. Bake until the eggs are set, 12 to 15 minutes. Let cool slightly before serving.
Tips:
- Choose the right muffin pan: A standard 12-cup muffin pan is ideal for making frittatas. If you have a mini muffin pan, you can make smaller frittatas that are perfect for appetizers or snacks.
- Grease the muffin pan: This will prevent the frittatas from sticking to the pan. You can use cooking spray, butter, or oil to grease the pan.
- Use fresh ingredients: Fresh vegetables, herbs, and cheese will give your frittatas the best flavor. If you're using frozen vegetables, be sure to thaw them before adding them to the batter.
- Don't overmix the batter: Overmixing the batter will make your frittatas tough. Stir just until the ingredients are combined.
- Bake the frittatas until they are set: The frittatas are done when they are set in the center and a toothpick inserted into the center comes out clean. This will usually take about 20-25 minutes.
- Serve the frittatas warm or at room temperature: Frittatas are delicious served warm or at room temperature. They can be eaten for breakfast, lunch, or dinner. You can also pack them in a lunch box for a healthy and portable meal.
Conclusion:
Muffin pan frittatas are a delicious and easy-to-make breakfast, lunch, or dinner option. They're also a great way to use up leftover vegetables and cheese. With so many different variations to choose from, there's sure to be a frittata recipe that everyone will enjoy.
